Good morning and happy Monday! I can’t believe it is the last week of April. This year is absolutely flying by for me. Coming off another great weekend, I am ready to take on this week.
I didn’t have much on the books for the weekend but it ended up being fairly eventful once all was said and done. I changed it up a little for this weekend recap.
5 Things I did (in order)
Friday night – Mexican dinner with SL
I had salmon on the menu to cook but SL was in the mood for Mexican and I couldn’t say no. I ate a ton of chips and salsa so only finished half of my dinner. I had the rest packed up then left it at the restaurant. THE WORST!
Cooked a Blue Apron meal
I did absolutely NOTHING on Saturday. I was a huge couch potato and just watched TV all day like a slob. Saturday night, after a day of nothingness, I finally cooked the aforementioned salmon that I was supposed to cook on Friday.
I really liked this recipe (Seared Salmon and Green Potato Salad) but made a few tweaks to the potato salad to fit our needs. I also learned how to pickle mustard seeds.
Drank a cider at an Irish bar
SL’s friend was home to visit
us his girlfriend so we crashed date night with another couple and met up at an Irish bar in Beverly. It was great to see people and nice to get out of the house after I was a total couch potato for most of Saturday.
Went to a camping themed baby shower
One of SL and my good friends in due in June and her sister and mom threw her the most adorable camping themed baby shower. I, of course, didn’t take any pictures except for this…
The whoopie pie station. And yes, I ate two. One birthday cake and one chocolate chip. I don’t regret a single bite.
Game of Thrones!
It’s back!!! I am really excited for this season and am hoping John Snow miraculously comes back to life.
4 New May Designs Notebooks Purchased 🙈
I have a problem people. I can’t stop buying these beautiful notebooks! The company is currently running a Mother’s Day promotion which was WAY too good to pass up (4 for $40). I am a mother? Nope. Did I buy these for my Mother? Nope. I just couldn’t resist!

3 Miles Ran (well, actually it is was 3.36)
I was back at Run Club on Sunday morning and very happy to be so. Last week it was moved to Saturday so I had to skip it because I was running the Chase the Gorilla Down Argilla 5k. We started with a quick dynamic stretch then set out for our 3+ mile loop.
Mile 1 – 8:34
This mile was basically one boring, flat road. Not my speediest but I felt ok. The first mile is usually my toughest.
Mile 2 – 8:43
Mile 2 was all rolling hills and in a cute little neighborhood right near my house. I don’t mind hills and liked this stretch of our the loop.
Mile 3 – 9:11
Oooooff. What happened? I had to cross some streets, I got a little lost and I overall just ran slow (for me). When I don’t know where I am going I do slow down which I why I am not one to go out and just explore run. I like to have a plan in place. Yes, there was a plan in place for this Run Club run but apparently I can’t pay attention to directions.
Last .36 miles – 8:38
Back on track. I knew were I was. I could see the “finish line” (aka the parking lot where we parked).
Total – 3.36 miles // 29:36 // 8:48 min/mile
Sadly, I have to miss Run Club next week but I have to venture to the Cape for a bridal shower but I will be back each and every Sunday that I can.
2 Workouts Completed
After Run Club I went home, ate some strata, drank some coffee and changed out of my sweaty run clothes and into something a little more…vibrant. Then I was off to Core, Buns + Guns.
Kailey led a great workout and had us do a set of 110 squats. Ugh! After my run and this class my legs were jello.
1 Vacation Booked!
SL and I are officially going to Ireland to celebrate our first wedding anniversary! I AM SO EXCITED!!
I immediately started a Pinterest board to gather ideas and be inspired to do more than just drink Guinness at the pub. We only have 4.5 days to do as much exploring as possible and will probably rent a car to do so.
Now it’s time to take on the week!
