It’s Monday. Woof. Why do the weekends go by so quickly? I spent a lot of time at home because it was so cold outside. SL and I are desperate to do something outside but the cold temperatures are just too brutal to deal with.
Because my weekend was a little boring, I figured a 5, 4, 3, 2, 1 type post would be perfect. This way, I can highlight the fun stuff and not have to mention the boring stuff.
5 Things I Did
Netflix’s Voyeur was both extremely intriguing and extremely disturbing.
SL and I had plans to go out for a date night on Friday but it was SOOO cold so we opted for delivery takeout and Netflix. We decided to watch Voyeur and we both equally loved it and were disturbed by it.
Have any of you watched Voyeur? Did you feel like it ended on a cliffhanger? Are you totally creeped out at the thought of staying in a hotel ever again?
Went to Orangetheory
Saturday’s workout (here) was all about hills and all about making me sweat. The treadmill blocks ranged from 2% to 6% incline so my all-out speed was a bit slower than normal.
Cleaned Up Christmas
Adios Navidad! I really didn’t get into the Christmas spirit this year so I was more than happy to clean everything up over the weekend.
Our living room looks so bare without our 10′ tree. What used to be there? We need to buy more furniture.
I did the normal grocery shopping and meal prep. I will be home late on Monday and Tuesday nights so I have dinner s 65% done so when I get home, I can jsut throw together some veggies and be done.

we I made homemade pizzas with Paleo flour crusts on Sunday night. No such thing as too much pizza!
3 Things I Am Looking Forward to This Week
- I am getting a massage tonight and couldn’t be happier.
- The weather is supposed to warm up this week. We have been dealing with arctic air for the last few weeks and its been miserable. This week, the temperature is supposed to climb above freezing and I’m going feel like wearing shorts.
- Does next weekend count as this week? I am looking forward to next weekend because we have another do-nothing weekend.
2 Meals I Prepped
Pinch of Yum’s Chili Garlic Instant Pot Noodles
These noodles are my lunches for the entire week. They are super sticky and delicious. I did make a few substitutions to Lindsay’s recipe based on what we had in the house
➡️ Coconut aminos for soy sauce
➡️ Omitted sugar
➡️ Champagne vinegar for white vinegar
➡️ 1 bell pepper for 2 bell peppers – this was purely due to the fact that I didn’t want to chop a second pepper
Homemade Buffalo sauce
Homemade buffalo sauce is the way to go. I always have the ingredients I need in the house and I know it doesn’t have any junk in it like some of the store-bought stuff.
If you are interested, here is the recipe.
➡️ 1/2 cup Frank’s Red Hot
➡️ 2 Tbsp coconut oil
➡️ 1 Tbsp coconut aminos
➡️ 1 tsp apple cider vinegar
➡️ 3/4 tsp garlic powder
➡️ 1/4 tsp cayenne pepper (optional)
Add all ingredients to a saucepan and once coconut oil is melted, whisk to combine. Done and done!
1 New Book I Am Reading
I started Where’d You Go, Bernadette this weekend and then promptly finished it. I would it was a like, not a love but a quick read nonetheless.
I have 2 more books from the library to dig into this week. Neither are light and fluffy like Bernadette so it will be a nice change of pace.
Because I feel like I have my shit together when I post about workouts and meal plans, I plan on continuing to do so in 2018. My meals and workouts at the tail end of 2017 were lackluster and its time to change that.
Weekly Workouts (last week)
#proud because I tried something new last week! On Wednesday I took a boxing class and have been sore ever since. I’ve been in such a routine lately that my workouts have felt stale so I switched things up (for one day) and was so happy that I did.
Monday: Rest – Happy New Year!
Tuesday: 45-minute “express” Orangetheory class + 30-minute cycle
Thursday: 50-minute walk (broken up into 3 stints) + shoveling (does that count?!)
Sunday: Core, Buns & Guns + 20-minute walk
This Week’s Menu
My veggie game was strong last week and I am keeping it going this week. We still have some Butcher Box meat in the freezer that I can use along with homemade sauce from last summer’s epic number fo garden tomatoes.
Monday (tonight!): Chicken drumsticks (prepped on Sunday) + collard greens
Tuesday: Homemade sauce + chickpea pasta + salad
Wednesday: Easy Baked Chicken thighs + Brussels sprouts
Thursday: Leftovers! SL has volleyball so I am on my own
Saturday – Sunday: I’ll figure it out then…
