Well, yesterday was a blur. I usually like to do a weekend recap on Mondays but I didn’t get my head above water yesterday until late afternoon so a blog post wasn’t happening. I had a meeting up in New Hampshire all of yesterday morning then had to get the rest of my work done then had a conference call at 7:30 pm.
Yes, it was a 12-hour work day. I haven’t had one of those in YEARS! It wasn’t awesome and I was more than ready for Monday to end.
So now it’s Tuesday, it’s snowing and I already feel behind. But I’m sipping my Toasted Graham coffee and I’m about to get my shit back together. We are dogsitting this week and once I’m done with coffee and breakfast I’m going to take the dog on a long (snowy) walk and listen to podcasts and try not to freeze my ass off.
I was planning about recapping my weekend but it was boring. SL was away so I spent most of the weekend reading and watching Netflix. I finished The Identicals by Elin Hilderbrand and loved it. Luckily, I have another Hilderbrand on deck (thanks Michele!).
The only other thing I did this weekend was spend a stupid amount of time looking at flights to Greece for this summer. I still haven’t pulled the trigger but I’m leaning towards laying over in London. Or Frankfurt, or Paris…ahhh I don’t know.
That’s all I have for today but I do want to leave my weekly workouts and menu. It’s nothing too exciting but I am trying a new Pinch of Yum recipe this week that I am very excited for.
Weekly Workouts (last week)
Last week was slow in terms of workouts. Honestly, I think this is correct but I don’t remember last week all that well. It’s been a long week (and yes, I realize its only Tuesday.)
Monday: Nada
Tuesday: 45-minute cycle class
Wednesday: Nada
Thursday: Nada
Friday: 45-minute Orangetheory class
Saturday: Satur-SLAY – This class is 1/2 on the spin bike and 1/2 doing some sort of AMRAP on the floor. The floor exercises were eerily similar to the floor exercises at OTF so that was weird but I loved the class.
Sunday: Nada
This Week’s Menu
I bought more salmon from Trader Joe’s and I have just enough of my Butcher Box supply to get through the week.
Monday (last night): Salmon, sweet potato fries and roasted broccoli
Tuesday (tonight): Cast iron grilled steaks, vegan risotto and salad
Wednesday: 5 Ingredient Vegan Vodka Pasta + pork sausage from our local farm
Thursday: I’m riding solo so I’ll either have leftovers or I’ll make a whole bag of Trader Joe’s cauliflower gnocchi
Friday – Saturday: Maybe I’ll cook, maybe we’ll do takeout, maybe we’ll go out. TBD.
Sunday: Super Bowl LIII – We are having people over and there will be a crazy food spread.
