All day yesterday I thought it was Monday which never happens. I am always a day or two ahead. It feels so great knowing that it is Wednesday and we are halfway through the week!
On Wednesdays, I like to share a typical day of eats. I can get pretty boring with my breakfast, lunches and snacks during the work week because meal prepping is my best friend. Yesterday, I tried something new – Trader Joe’s Almond Butter Turmeric Salad Dressing so I figured I would document the day in eats.
What I Ate Wednesday
Breakfast: Egg muffins with avocado toast (Ezekiel bread with 1/4 avocado). I also enjoy a cup of coffee with collagen and cashew milk.
AM Snack: Tone It Up Blondie Muffins
These mini muffins are so good and you would never know they are made from chickpeas. They are also not photogenic so I am sparing you a gross, unprofessional picture.
Lunch: Meal prepped chili. This chili was literally an EBTKS chili. It has ground beef, ground turkey, cauliflower rice, homemade sauce (that has eggplant puree in it), onions, peppers, black beans and a homemade spice blend. Chili is the perfect dish to throw tons of veggies in and completely forget they are in there while you eat it.
I had a small side salad along with the chili and tried the Trader Joe’s Almond Butter Turmeric salad dressing.
The verdict – it’s really good! There are only 60 calories for 2 tablespoons. I used only about 1 tablespoon on my small salad and it was plenty.
The ingredients are very clean too – water, almonds, lemon juice, ginger puree, cane sugar, garlic, sea salt, turmeric and black pepper.
PM Snack: Black bean hummus with cucumber and GG crackers.
I am back on the black bean hummus train. I love this hummus so much but I go through stages where I eat so much of it that I get sick of it and have to take a break. I also had a kombucha because I love kombucha and I’m obsessed.
Post work and before dinner, I hit up a 30-minute cycle class and was starving by the time I got home.
Dinner: Haddock en Papillote. This was supposed to be Monday night’s dinner but I got home from OTF late and opted for turkey pie that my mom made (Mom food = best food!). So last night I baked haddock (that SL caught himself) in parchment with asparagus, olive oil and lemon. Easy as can be.
My piece of fish was HUGE and way more than I needed but I ate all of it anyway. I also had a side of sweet potato (unpictured) and a small green salad with the Almond Butter Turmeric Salad Dressing and quinoa crisps.
After dinner, I enjoyed a glass of wine and a paleo(ish) cookie while watched the VS fashion show. I didn’t take any pictures because the lighting was bad and I just wanted to eat my cookie ☺️
