Monday. Blah. I am not ready for the weekend to be over. I am, however, looking forward to the fact that once we get through this week, we have a super short week next week then Thanksgiving! My favorite! There is nothing much to look forward to this week so lets chat about my weekend!
I got out of work on Friday and picked up SL and headed to a friend’s new house for dinner. This was a last minute invite so like a real asshole, I showed up empty-handed. Get your shit together, Emily.
Our friends made the most tender, fall-off-the-bone ribs with green beans and mashed potatoes. We finished dinner and ended up playing Heads Up and Jenga until I realized it was past 11:00 pm and my old-lady-self had to call it a night.
My phone stayed tucked away for the evening so I could enjoy time with friends. So yeah, no pictures.
When I woke up on Saturday morning it was 25° outside. TWEN-TY f*cking FIVE. Why? It isn’t even winter yet. Gross. I bundled up and headed to the grocery store and came home to get my Saturday rolling.
(Breakfast plate: Stone English muffins, egg whites, corned beef hash, a piece of a plantain and only lonely piece fo broccoli along with some half-caff coffee)
SL and I made breakfast then we settled in on the couch and watched a few episodes of Manhunt: Unabomber on Netflix.This miniseries tells the story of the FBI’s hunt for the Unabomber in the 1990s. So good! We rarely have days when we can be lazy together so we took full advantage.
During our binge, I did manage to get off the couch for long enough to make Mulligatawny soup. This Indian curry soup is perfect for a cold day.
On Saturday night, I actually did something! SL and I went to the Bruins game with our friend Brandon (her married us and was there with Go Pro in hand when SL proposed).
The Bs lost but it was a fun game either way.
Sunday started with a Core, Buns + Guns class and I opted for heavier weights because this was one of my only workouts for the week and I immediately felt sore after class.
SL and I then went out and got bagels at the local bagel shop. I went with roast beef and caramelized Vidalia onions on an onion bagel and it was honestly THE BEST bagel sandwich I’ve ever had.
I’ve never eaten something so slowly because I didn’t want it to end.
Up until this point, my weekend had been relatively vegetable free so I made Cassy’s Four Greens Soup in an attempt to remedy that.
Julie recently recommended this book and I immediately put a hold on it from the library. I’m roughly 30 pages in and already now I will fly through this book.
For dinner, I made nachos for SL and a nacho salad for myself.
(Nacho salad: Butcher Box ground beef with homemade taco seasoning, salsa, jalapenos, olives, blue corn chips, lettuce and arugula)
We enjoyed dinner, watched the Patriots game (huge win!) and called it a night.

This Week’s Menu
Does anyone else get really sick of everything they cook? I’ve been feeling so uninspired by my own cooking even though I make new-to-me recipes all of the time. Ugh. I’m just in a slump and I need to find my way out.
Monday (tonight!): Cashew Chicken – a Lawson household favorite. I use the Pioneer Woman’s recipe as a base but change up a bunch of things.
Tuesday: Pork chops (I make these weekly), Mexican-style cauliflower (from Lexi’s Burrito bowl recipe) rice and salad
Wednesday: Baked haddock and asparagus
Thursday: Leftovers or something easy. SL plays volleyball so I am on my own.
Friday: Date night 😘
Saturday – Sunday: Wing it!
