So I’ve been MIA for a bit but for good reason. SL and I were in Portugal last week! We had the best trip and were able to squeeze in so much in just 5 days.
I plan to write about the trip and share some of the hundreds of pictures we took but here is the quick rundown.
Day 1: Lisbon
Day 2: Sintra
Day 3-4: Porto
Day 5: Carcavelos & Lisbon
Obviously, I would have liked to stay for longer but that pesky job thing made me come home. Both Lisbon and Porto seemed like such liveable cities (hint hint SL). Every time I visit somewhere new I can always see myself living there. Is that weird?
In Portugal, I ate so much delicious food but mostly I ate octopus and bifanas. There was one day that I ate octopus for both lunch and dinner and another day that I ate bifanas for both lunch and dinner (4 total). Yes, I am extra.
Now that we are caught up, I figured I would share a day of eats in a WIAW post.
What I Ate Wednesday
Breakfast: I’ve been using a new protein powder lately and I’m not 100% sure I love it but I am getting used to it.
My smoothie lately has been super simple – 1 scoop of Primal Kitchen Chocolate Coconut Collagen Fuel, 1 Tbsp peanut butter, 1 cup almond milk, 1 tsp maca, heavy sprinkle of cinnamon
AM Snack: Two GG crackers with 1/2 an avocado mashed on top
I learned about these babies from The Skinny Confidential and have been eating them a bunch. We brought some sardines home from Portugal and I am excited to try them on this crispbreads.
Lunch: Chicken Soup Noodles

I followed Pinch of Yum’s recipe closely but made a few changes
- Added extra chicken
- Subbed butter for more olive oil
- Subbed cornstarch for tapioca starch
- Added corn (because we had it on hand)
- Subbed Primal Palate Adobo Seasoning for the thyme and parsley
- Omitted green onions because I forgot to buy them
PM Snack: The old standby, kombucha!
Dinner: Haddock that SL caught with roasted asparagus and potatoes
This dinner came together so quickly that even I was impressed with myself. I was starving after getting home from a cycle class and wolfed down dinner before taking any pictures.
I had leftover fingerling potatoes that I reseasoned and roasted with the asparagus. While they cooked, I pan seared the haddock which I seasoned with paprika, garlic powder, onion powder and a dash of cayenne.
And those were my eats yesterday. Nothing out of the ordinary but all delicious and satisfying.
