This easy Chili Maple Baked Chicken recipe was my go-to dinner when I was in grad school and had no time to prepare weeknight dinners. I would put it together on Sunday and freeze it then throw in the oven when I was ready to eat it.

Because my days were so long and crazy, I needed to make sure I ate right so my body wouldn’t shut down. Having a nutritious dinner ready for me when I got home was key. This Chili Maple Baked Chicken recipe was simple enough for SL to put together (with a little Sunday prep from me).
I honestly think we ate this chicken once or twice a week for 2 years. Luckily, it’s so delicious that I never got sick of it.
Easy Chili Maple Baked Chicken
- 1 lb. chicken (can be breasts or thighs, I prefer thighs)
- 1 T chili powder
- 1-2 T maple syrup – that shit is hard to measure in small quantities
- 1 T water
- ½ t salt
Toss everything into a gallon freezer bag and mush it around to the chicken get covered in all of the deliciousness.
From here, you can either throw in in the freezer* and bake at another time or let it marinate for an hour then bake it at at 375 for 35-40 minutes.
*If you freeze it, remember to thaw it before cooking it.
I usually serve this chicken with a big green salad and a side of roasted broccoli or roasted sweet potato. It is so versatile that it will literally go with anything.
