These Cinnamon Date Muffins are sugar-free, protein packed and come together easily in the food processor. Oh, and they are delicious!
Last week I picked up a bag of Bob’s Red Mill Paleo Baking Flour and was inspired to do some baking.
I’ll be the first one to admit that I am NOT a good baker. Paying attention to measurements is a pain in the ass and I don’t love doing it.
But I wanted to create something that wasn’t gross but still healthy in the right portion size.
Enter cinnamon date muffins. I made mini because I would rather eat 3 mini muffins that one big muffin. I also recently bought these little silicone mini muffin baking cups that are life changing. They are easy to clean and mean I don’t have to clean the muffin pan which is a pain in the ass.
These muffins are filled with healthy, real ingredients. They have no dairy, no added sugar, no gluten and no gross taste.
Ok, time to make the the muffins! First, add all wet ingredients (dates, bananas, vanilla, egg whites, coconut oil, almond milk) to your food processor and blend until smooth.
If needed, scrape down the sides then add the dry ingredients (flour, protein powder, baking soda, salt, cinnamon) and pulse until well combined.
As these muffins were baking in my oven, my kitchen began to smell like I knew how to bake. Ha! Joke is on me!
These aren’t the most beautiful food items to photograph… …and I am terrible at taking pictures so the final product looks like little brown rocks.
Cinnamon Date Muffins
- ¾ cup Bob's Red Mill Paleo Baking Flour
- ¾ cup vanilla protein powder (I used Perfect Fit)
- ½ tsp baking soda
- ¼ tsp salt
- 2 tsp cinnamon
- 1 cup dates, pitted
- 2 bananas
- 1 tsp vanilla extract
- ½ cup egg whites
- 2 Tbsp coconut oil
- ½ cup almond milk
- coconut oil spray
- Preheat oven to 350 degrees.
- Combine wet ingredients in a food processor and blend until smooth.
- Add in dry ingredients and blend on low until combined.
- Spray a mini muffin tin with coconut oil spray. If using muffin tins, spray those too.
- Add batter and bake for 20 minutes or until a toothpick comes out clean.
