Good morning and happy Friday! Once I publish this weeks Friday Favorites, SL and I will being heading up to Maine for a hike, some lobster and maybe a drive-in movie. We don’t plan to stay up there all weekend because the weather is looking crumby but we are looking forward to changing things up for a night.
This week has certainly had its ups and downs but the weekend is only looking up from here!
Without further ado, here are my Friday Favorites (#58) – some of the things I really loved about this week.
Friday Favorites #58
Blue Apron Empanadas de Picadillo
Empanadas are delicious! I have been looking forward to this week’s Blue Apron delivery for weeks because empanadas were on the menu. I basically love any meat wrapped in some sort of dough and now I know how to make them.
These yummy handheld pockets of love came together in no time at all and tasted amazing. The filling was ground beef and tomato but I bet they would be just as good with ground pork or ground chicken and spices. The side was a tomato cucumber salad that I squirted with lime juice and drizzled with a bit of olive oil.
I also made Sweet Chili Chicken this week and loved it. I will be re-creating both recipes over and over again!
Homemade Ipswich Fried Clams
What better way to celebrate the 4th than with homemade Ipswich fried clams? SL and his friend got their recreational clamming license this summer and have be digging up clams like crazy. We had people over on the 4th and decided to make our own homemade Ipswich fried clams.
The whole process took forever between shucking, prepping and battering 16 lbs. of clams but it was worth it. They were the most delicious fried clams I have ever had.
Lots of babies
A bunch of my friends have recently had kiddos and this week I have been able to chill with a few of them. My sister in due in September and one of my besties is due in January so there will be even more babies in the coming months. I used to be very nervous around little babies but lately I have been getting better. They don’t scare me quite as much as I used to.
How cute is the big dog brother protecting his little baby brother? These two were inseparable the whole time I was hanging out with them this week.
New Workout Top
Old Navy for the win! I saw this shirt on Gina’s Instagram and immediately ordered it from my phone. It’s basically my life motto these days. My hair is up in a messy bun or sweaty pony tail 84% of the time. I went with a size up than I usually do because I have been loving looser fitting tanks this summer.
I snapped this pic after a particularly difficult Cardio Box class yesterday morning that has me so sore today. I love a tough workout that leaves it mark.
