I casually mentioned in this post that I really having been loving having my shit together lately. Despite remodeling our kitchen (hello new countertops!) and being unable to cook for a week I truly feel for the first time in years that I have my shit together. I got my shit together and you can get your shit together too.

Weekly Agenda

It’s no surprise that I love May Designs notebooks. I have no less than a half dozen notebooks that I use for different things, one being a weekly agenda. I loving seeing my weeks at a glance rather than a day by day planner. It also functions as a bit of a diary for me as I like to write down date night locations, workouts and social engagements.

This is another May Designs notebook that I have. Unfortunately I can’t find it on their site anymore.  This notebook is broken down by month with space to write down everything you spend your money on in a given month. One of my big goals for 2016 is to pay off both my car and one of my student loans. I also have lofty financial goals to accomplish over the next decade.

The budget notebooks lets me see exactly how much to pay towards each bill every month and when I can expect to pay off certain loans. (I am planning to pay off my car in May, 3 months earlier than expected!!)

It’s no secret that I love working out and consider it my favorite hobby. Wether I am training for a race or just workout out to work out, having a holistic view of what I am doing. Last week I switched up my workout routine because I realized I had been on the spin bike a bit too often.

I also signed up for a yoga class at a new-to-me studio because after an hour of yoga I always feel like I have my shit together!

On days that I get out of work, workout out and then come home and make a beautiful dinner for myself and the husband I totally feel like I have my shit together.

Enter Blue Apron.

Now I am the queen of meal planning and meal prep but went I am in a cooking rut, I turn to this service for inspiration and to learn new techniques. My all time favorite meals to date have been ones that not only are delicious but involve elements of the meals, whether ingredients or techniques, that I wasn’t originally familiar with.

Here are my favorites so far:

  • Seared Cod & Udon Noodles*
  • Chicken Fried Chicken
  • Chicken Schnitzel*
  • Crispy Catfish Shoyu Ramen*
  • Spiced Turkey & Chickpea Chili
  • North African-Spiced Shrimp & Couscous

*I’ve recreated these recipes on my own with slightly different ingredients and they still turned out amazing!

And while we are taking about one of my favorite things ever, food…

Meal Prep

Does meal prep take time. Yes.

Does it save time ten fold. Yes.

Just do it.
