Hello and Happy Memorial Day! This is the unofficial start of the summer in my neck of the woods but Mother Nature didn’t get the memo – its only 50 degrees today. Woof.
In honor of the holiday, I have the day off from work and I am using it to my advantage – doing lots of meal prep and binging The Keepers on Netflix.
Memorial Day weekend was a great one filled with friends, food and festivities.
Memorial Day Weekend 2017
In typical Friday night fashion, SL ordered takeout (Thai this time) and watched TV on the couch before going to bed fairly early. On Friday, we opted to catch up on the latest season of Silicon Valley. I didn’t take any pictures because there was nothing new and/or noteworthy about Friday night.
I was up bright and early on Saturday to meet with my run club for 6 miles. The weather was sunny and warm and perfect for running.
My run group ranges from 8-12 people and we all finish our runs within 5-10 minutes of each other. We were all stretching after and chatting about running things (chaffing, peeing in weird places, etc.) and someone asked about pre-run fuel.
I’ve run the gamut when it comes to eating/drinking pre-run and figured I’d write about it later this week. Stay tuned!
After run club, I grocery shopped then finally made it home for breakfast. I had may usually – eggs in tortillas and homemade breakfast sausages.
Around noon, I stopped doing chores (meal prep, laundry, cleaning) and made a Blue Apron meal for lunch – Asparagus & Summer Squash Curry.
This meal was amazing! I’ve been eager to try some of Blue Apron’s vegetarian meals and this was my first. I will absolutely be making it again on my own.
Once fueled, it was time to do a little gardening. SL and I bought a bunch of herbs last weekend and Saturday was the perfect day to get them in the ground. This year we decided to put our herbs out by our fish pond instead of in the garden itself.

The fish pond is closer to the kitchen than the actual garden so I think this will work out well.
SL and I went to dinner for Mexican on Saturday night and I dug face first into my steak fajitas before remembering to take pictures. Oops! After dinner, SL met up with a few friends and I held down the fort at home and went to bed early.
Sunday morning started out slow, just like I like them to. I worked on this post, drank some ginger tea and waited for SL to wake up. I had leftover curry for breakfast and cleaned up the house before our friends started to arrive for a Memorial Day weekend BBQ.
I didn’t take a single photo while playing yard games, eating lots of food and chilling with everyone. Yolo.
At 10:30 pm things started to wind down and I went to bed after a nice long weekend.

Monday: REST – I just wasn’t feeling it
Tuesday: Yoga + 5 mile training run
Wednesday: 45-minute cycle
Thursday: REST again…it’s been a tough week
Friday: 30-minute cycle
Saturday: 6 mile run and felt great

Last week I got a Blue Apron delivery that I totally forgot about so this week I have to cook up all of the extra food I have in the fridge!
Monday (tonight!): Slow Cooker Basil Chicken in Coconut Curry Sauce from The Food Charlatan
Tuesday: Picadillo Tacos from PaleOMG (I’m obsessed with these!)
Wednesday: Pioneer Woman Cashew Chicken
Friday: Cook something new from one of my cookbooks
Saturday: Wing it!
Sunday: Homemade sauce + spaghetti squash
