Why do long weekends go by so quickly? I guess I can’t really complain, I had an amazing Memorial Day weekend and we are already well into the work week. The light at the end of the work week tunnel is always a bit brighter when the week starts on a Tuesday!
As usually, I am checking in today to recap what was an amazing long weekend!
Memorial Day Weekend
After lunch on Friday, I closed up my laptop and officially started my long weekend. Myself, SL and a bunch of our friends had a beach day planned for Saturday so I went to the grocery store to buy beach essentials – sandwich fixings, grapes and Jax.
Friday night was very low key for SL and I because we knew the rest of the weekend would be jam packed with fun. I cooked a Blue Apron dinner – Beef Tartines with Zucchini au Pistou. It sounds fancy and it was but still super easy to make.
After a little couch/TV time, SL and I hit the sheets in preparation for an early wake up call.
Who gets up at 7:00 am on a Saturday morning? Those who want the best beach spots.
We spent the WHOLE day at the beach then had a bunch of friends over after for a cookout. It was a perfect day in which I failed to document because my phone was put away the whole time.
Another early wake up call but this time our alarms chimed at 6:30 am. Porque? We drove up to New Hampshire to hike my second 4,000 footer – Mt. Moosilauke! (My first was Old Speck last summer) I will write a full post on our hike later this week but for now, just know that it was challenging but very fun.
After the hike, my legs were jelly and my belly was growling. I googled local places for good food and good beers (for SL) and we found Woodstock Station at the Woodstock Inn. We were in a meat mood (is that a thing for anyone else?) and opted for the Baked Pig Wings and the Duck Wings.
Pig wings are actually hammered shanks still on the bone and they were amazing. The shanks were baked with an apple cumin BBQ sauce that was delish! I usually find BBQ sauces to be too sweet but this one was the perfect amount of sweetness. I hope this concept catches on because I would love to see baked pig wings on more menus.
The duck wing were equally as delicious, fried and lightly drizzled with an Asian-tasting sauce.
We made the 2 hour drive home, showered and hit the couch hard just in time for Game of Thrones. It was lights out by 11:00 because we were both exhausted from the long hike.
We slept in! No early wake ups for us as we had nothing planned. After lounging in bed until 9:30 we lazily got up and made waffles and eggs for breakfast. I did a cleaning, meal planning, grocery list-making and finally got dressed for the day and did my usually Sunday chores, on Monday.
SL went clamming with his friend and ended up coming home with about 16 lbs. of fresh-from-the-ocean clams for us to steam.
We enjoyed them along with leftover from our cookout on Saturday for dinner then treated ourselves to ice cream for dessert.
All and all it was the perfect Memorial Day Weekend and I am sad it is over. I am however excited for more weekends like this in the near future as summer is now on the horizon.
