It’s Monday friends. But today isn’t the worst Monday – 1) I have a 3 day work week! 2) I get to meet a precious baby tonight that is brand new to the world. 3) My workout for the day is already done!
Enough about Monday though, let’s talk about the weekend because that’s way more fun!
The weekend started with a mellow Friday night at the Lawson household. We ate leftovers, read and watched The Pizza Show on Viceland which is one of my new favorite shows. Friday night was not much to write home about so I’m going stop.
The Lawson family was up before the sun on Saturday morning so SL could drive up to NH for class. After he left at 6:00 am I was wide awake so I watched some Gilmore Girls before getting my ass to cycle class. Class was great then right from there I got my grocery shopping for the week done.
After my 30-minute cycle class, I took my sweaty ass to the grocery store to check that chore off my list. And it was time to cook and meal prep. I made:
- Cinnamon Date Muffins (recipe coming soon)
- Mulligatawny Soup from PaleOMG
- Chopped veggies for snacks
- Sweet potato fries for snacks
After all the meal prep, I sat down to read more of The Couple Next Door. I like it so far (not love) but am finding it a tad slow. Hopefully things will catch up and it will end with some great twists! I also watched one of my favorite movies of all time, Heavyweights!
When SL got home from class he was hungry so I got in the kitchen and made chorizo sweet potato tacos with chimichurri sauce. They were so so good and I will be making them again. For the taco shells I used Siete Foods Cassava & Coconut tortillas.
I’ve been loving Siete Foods products lately and can’t wait to come up with more recipe ideas for their products.
After dinner, SL and I started watching Sillicon Valley on HBO and I love it. We ended up finishing 7 episodes before bedtime. I am so happy we found another show we both like.
Sunday morning started lazily with some sleeping in and reading in bed. Then it was time for my final weigh-in for my DeitBet. Results below!
When SL got home from playing flag football with his friends, he mentioned going out for some apps. I was all about it and quickly got myself together and off to Newburyport we went.
First stop, Brine for oysters!
Cheers! I have been craving oysters for months and finally got the chance to indulge. From there we went to another bar/restaurant where I ordered a Duck & Kale salad for dinner.
(Pulled duck, pear, crystallized ginger, kale, mandarin orange, shallots, sundried cranberries & sliced almonds tossed with a white cranberry vinaigrette)
I want to eat this salad every single day. Serious, I need to learn how to make pulled duck because I need to recreate this salad at home on the regular.
After dinner, we went home and watched more Silicon Valley before calling it a night.
All and all it was a relaxing weekend. As much as I love relaxing weekends, I am really looking forward to my completely non-relaxing weekend to come!

Weekly Workouts (last week)
Monday: Rest day. I just wasn’t feeling it on Monday so I took a cue from my bod and just chilled.
Wednesday: 45-minute Cycle
Thursday: Core, Buns + Guns & 1.24 mile walk outside 🙂
Friday: 30-minute Cycle
Saturday: 30-minute Cycle
Sunday: One round of this 15-minute sweaty HIIT workout. I was toast after just one round so I let my body have a break.
On deck this week – Skiing, skiing, skating (hopefully) and a hotel gym workout or two!

We are traveling from Thursday on and I am traveling for work most of the day Tuesday so this week will be much different than the usual. I didn’t do much meal prep this week because of traveling but there was still some:

Sunday: SUPERBOWL SUNDAY!! Probably lots of apps and not a real dinner
I won!!! During the last four weeks I lost 7.2 pounds and beat my goal by 1.2 pounds. I’m looking forward to continuing the streak in February.
