Good morning and happy Monday. Let me rephrase that – Happy Marathon Monday! Today I’ll be watching marathon coverage from my house, getting chores done and enjoying this holiday (Patriot’s Day – google it if you don’t know about the holiday).
I had a great weekend and we enjoyed beautiful spring weather.
As any great long weekend should start, my boss told us to call it quits on Friday at 2:00! 🎉🎉
I’ve had a couple of really tough work weeks so peacing out early on Friday was very needed. I went directly to the grocery store to get my shopping out of the way and was home and in weekend mode before 3:00 pm.
We kept things low key on Friday – I cooked dinner while Scott studied and watched the Red Sox game. Friday night’s dinner was a Blue Apron meal.
The bolognese was super simple to make and came with the side salad.
After dinner, I started reading my new book then we hit sheets around 10:00 pm for our 5:00 am wake up call.
SL was out the door for class by 6:00 am while I lounged in bed watching Gilmore Girls until 7:15 am. At that point, I got up had my coffee and 1/2 of Larabar and was off to Orangetheory.
Class was tough but manageable and I finished with 27 splat points. I’m finally starting to feel less like a wobbling baby deer on the rower. Yay for me!
My grumbling stomach was the only thing on my mind when I got home so I immediately whipped up my new favorite breakfast – mini breakfast burritos made with Siete FoodsCassava & Coconut tortillas, 1 whole egg, 3/4 cup egg whites and Sriracha. I didn’t take any pictures
I enjoyed my mini burritos alongside 2 homemade breakfast sausages. After making my first batch of homemade breakfast sausages, I don’t think I could ever go back to store bought. I roughly used Juli’s recipe from her book.
After breakfast (#2) I got myself together and headed to my sister’s house to babysit my niece for the day. I basically begged my brother-in-law for the job and after much discussion (none at all) they gave me the gig.
Gracie and I hung out until all day and I couldn’t have been happier. Once my sister got home, I met SL and some friends for a late sushi dinner.
Sushi boat was amazing! Dinner didn’t end until after 10:00 pm and by then I was more than ready to go home and go to bed!
Happy Easter to those who celebrate! Sunday started with a very challenging workout at Studio 5. It was 25 on the spin bikes then 25 on the floor doing strength and more cardio. Everyone was dripping in sweat by the time class ended.
SL and I then joined my family at my parents home for and Easter cookout. My mom made all the food in the world and I ate it all.
My plate – BBQ chicken, swordfish, mandarin orange salad, roasted potatoes and Brussels sprouts.
Baby Gracie stole the show in her pink striped Easter dress. SL and I looked cute in stripes too 😉
After Easter with the family, SL and I had a few friends over and enjoyed the unseasonable warm temperatures.
By the time 9:30 pm rolled around I was ready to call it a day. I watched a couple episodes of Bull (<– loving this show) and fell asleep shortly after.
The weather this weekend was so amazing and I took full advantage of it. This week’s weather isn’t looking as awesome but I’ll be stuck in the office so what does it matter?

Thursday: Core, Buns + Guns – I haven’t been in so long and it hurt so good!
Friday: 30-minute cycle
Sunday: S5 Easter Triple Threat – Woof! This class was tough.
This Week’s Menu
The menu this week has no rhyme or reason. I basically scrolled through my Pinterest Dinner Inspo board, got ideas and went from there.
Monday: Pork Rind Chicken fingers from the Fed & Fit cookbook + roasted Brussels sprouts
Tuesday: Saucy Garam Masala Meatballs with cauliflower rice + salad
Wednesday: North African-Spiced Shrimp and Couscous (old Blue Apron recipe that I loved)
Thursday: Baked chicken thighs + salad
Friday: Picadillo Tacos + salad
Saturday: Out/Takeout – I’ll need a kitchen break
Sunday: Some in the crockpot
