Good morning and happy May 1st! This year is seriously flying by. I had a great weekend but, as usual, it felt way to short. Weekends should be twice as long.
SL and I have a fun trip planned for the next weekend so I am hoping this week flies by!
In normal Monday fashion, here is a little recap of my weekend.
The weekend started with “Happy Hour” on our back deck. I opted for a mocktail (tart cherry juice and seltzer) because I wasn’t feeling wine (weird, I know). We ordered a pizza and laid low for the rest of the night.
Saturday was the first beach day of season! But before the beach, my day started with run club!
I had a great run and then went grocery shopping.
After running and shopping, I was starving so I cooked up my current favorite breakfast.
Siete Foods tortillas, 1 whole egg and 3/4 cup egg whites scrambled, Sriracha and 2 homemade breakfast sausage patties.
Then it was beach time!
I love living so close to the beach.
Around 2:00 pm, I got hungry and reached for my Subway Chopped Salad. It didn’t exactly fill me up but it was the perfect thing to eat at the beach.
SL and I had an early dinner with friends and were home by 9:00 pm. We watched an episode of The Young Pope and went to bed early-ish. There is something about the the beach that wipes me out!

We slept in then made breakfast and got to work in the kitchen.

We are the proud new owners of a used Schwinn Airdyne bike! Neither of us have used one but it was free and we have space in the basement gym so now I am pinning as many workouts as I can using the Airdyne bike.
On Sunday night we settled in with leftovers for dinner and started watching Shameless. So far, we love it! It was the perfect way to end our weekend.

Tuesday: Yoga + 3.03 mile run
Wednesday: 45-minute cycle
Thursday: 4 mile run
Friday: 30-minute cycle
Saturday: 3.30 mile run
This Week’s Menu
While running on the treadmill on Thursday, I was watched YouTube videos and found dinner inspiration from Blogilates’ Meal Prep Tips video. All of the dishes she preps use ground turkey which is so easy to make and I am excited to try a couple of the recipes.
Monday: Turkey & Green Beans with sweet potato
Tuesday: Asian Tacos (inspired by Blogilates’ Asian Lettuce Wraps)
Wednesday: Easy Chili Maple Baked Chicken with broccoli
Sunday: Wing it. I’m not sure what time we will get home from our weekend away.
