Good morning and welcome to a brand new week. Its the first day of spring and in my neck of the woods the high today is only supposed to be 49°. Brrrr. Where are the spring temperatures?!
I spent this weekend mostly solo except an hour or so out with friends on Saturday night. SL was away so I got a lot of boring things done – grocery shopping, laundry, cleaning, etc.
Because my super lazy weekend will probably be very boring to share, I’ll only go over the highlights.
Saturday morning breakfast – egg white scramble with bacon, Brussels sprouts and butternut squash and avocado toast.
Sunday Orangetheory class.
This class was brutal and I was so sweaty and completely spent afterwards.
Sunday night I watched The Help and I really liked it.
I’ve been meaning to watch this movie for ages and finally got to it on Sunday night. I desperately wanted to watch Big Little Lies but SL and I have been watching together so I figured I’d wait until he gets back to watch. I’m such a good wife.
So there you have it, the highlights from my weekend were eating, working out and watching a movie. Lame.
Weekly Workouts (last week)
Monday: REST day.
Tuesday: 3.5 mile run
Wednesday: 45-minute cycle class
Thursday: REST day
Friday: 30-minute cycle + 2.51 mile run
Saturday: 3.15 mile run
Sunday: 45-minute cycle + Orangetheory – normally I would not double up workouts but I was already signed up for spin when I got the opportunity to take Orangetheory so I jumped at the chance.
March miles – 25.34. I am 63% of my way to my goal of running 40 miles this month!
This Week’s Menu
This is a weird week in terms of meal planning. SL will be out of town for part of the week and I am cooking for one which is weird for me.
Monday: Asian beef tacos or burrito bowl
Tuesday: Sushi + movie night with friends
Wednesday: Maple Chili Pork Chops via PaleOMG + asparagus. I made these a couple weeks ago and they were a HUGE hit. These chops will be in regular rotation in our house.
Friday: Beef + Broccoli with potatoes from the Fed & Fit cookbook. This is another recipe that will become a fixture in the HurLaw household.
Saturday: Wing it!
Sunday: Slow Cooker Tikka Masala via Fannetastic Food. I wanted to make this last week but with SL being out of town, it didn’t make sense to cook a whole crock pot meal for just me.
