Good morning and happy Monday. I am anything but bright eyed and bushy tailed this Monday morning. Ski weekend 2017 was a huge success but I am struggling this morning due to lack of sleep.
I got up early to get to bootcamp class and try to throw myself back into my routine but boy am I beat.
Enough of how brutal this Monday morning is, let talk about the weekend!
Friday started bright and early with SL and I driving up to Maine for our ski weekend. We got to Sunday River and the weather was beautiful.
This was the first time that I skied in weather that was not bitterly cold. I loved every minute of it too.
The group of about 10 of us broke for lunch midday and I opted for a Kale & Blueberry salad and a burger.
It’s all about balance, right? We finished our day on the slopes around 4:00 pm and headed to the house we rented about 20 minutes away.
Saturday & Sunday
Not only do I not have picture from either day, I also don’t have much to report. I was a bump on a log all day Saturday and only really moved around to get in and out of the hot tub.
I was semi more productive Sunday when I cooked breakfast for 15 people but that was about it.
All and all the ski weekend was full of good friends, good food and lots of relaxing. But now I am ready to get back on track with food and fitness this week.

Monday: 45-minute cycle & Core, Buns + Guns class (Yay for Monday holidays!)
Tuesday: Yoga + 3 mile run
Wednesday: Orangetheory class
Thursday: 4.22 mile run
Friday: Skiing at Sunday River
This Week’s Menu
After indulging all weekend on delicious food and a few glasses of wine, I am more than ok with some healthy meals for dinner this week. The theme is protein and produce!
Monday: Chili Maple Baked Chicken with Brussels sprouts
Tuesday: Picadillo Tacos via PaleOMG
Wednesday: Sticky & Crispy Orange Sriracha Chicken Bowls via PaleOMG
Thursday: Indian Butter Chicken via PaleOMG (are you sensing the theme?!)
Friday: Panang Curry from the Fed & Fit cookbook
Saturday: Out/takeout – I am doing a birthday spin class with a group of girlfriends at 6:00 pm and will either grab food on the way home or meet SL out for dinner somewhere
Sunday: Slow Cooker French Dip Sandwiches (<– SL requested these). I will probably skip the roll and eat mine over a bed of cauliflower rice.
