Hello hello and happy Monday. It’s another snowy, work from home day for me which is, in my mind, a great way to start the week! SL and I had a great weekend that mostly revolved around all of the delicious food we ate!
My heart and stomach are so happy about all the Mexican food I ate this weekend. This wasn’t planned but the past few days were filled with Mexican or Mexican inspired fare.
I bastardized Cassy’s Enchilada Verde Turkey Meatball recipe by buying the roasted peppers and salsa verde. It’s a mini miracle that I even cooked a dinner on a Friday night so don’t throw shade for cutting corners where I can.
These meatballs were served over a mix of rice and cauliflower rice and were phenom. We spent the rest of Friday night on the couch then went to bed early. Wile Friday night!
We were up super early in the Lawson household on Saturday – SL headed to class and I headed to the studio for a cycle class. After class I took my sweaty booty to the grocery store and got my shopping out of the way for the day.
Breakfast came in the form of leftovers from Tuesday and as soon as I finished, I started to meal prep! I made PaleOMG’s 5 Ingredient Pizza Spaghetti Pie, cut up grapefruit, made chia pudding and tostones.
Tostones are twice fried green plantains. I followed the recipe in Juli Bauer’s latest cookbook, Juli Bauer’s Paleo Cookbook.
I spent the rest of day relaxing, watching girly TV shows and reading. It was perfect for another snowy Massachusetts day.
Dinner came in the form of, you guessed it, Mexican food at our local Mexican restaurant where I essentially ordered a bowl of meat.
(From the menu – Chorizo, adobo flank steak, grilled chicken and marinated shrimp served in a Molcajete bowl of broth with pico de gallo and avocado)
I wanted my main meal to be carb-light because I enjoyed a few (thousand) tortilla chips and salsa. I did have a couple bites of corn but since corn isn’t in season, it wasn’t worth the calories.
After dinner we got into our comfy clothes and hung out for a bit before bed. Both of were exhausted from our long day.
Yay for sleep-in Sundays!
Breakfast was a egg white, pepper and onion taco in a Siete Foods tortilla. Yes, more Mexican food. Can’t stop, won’t stop!
The snow started to come down like crazy on Sunday so SL and I took the opportunity to stay inside and watch Manchester by the Sea. The movie was filmed right around the area I live so it was fun to see landmarks that i recognize.
Other than that, the movie was pretty depressing. Good but a downer.
For dinner, I was going to make tacos to keep with the Mexican these but decided to roast a whole chicken.
The was a great idea because 1) It made the house smell amazing; 2) Leftovers for dayyyssss and; 3) Bone broth. I love bone broth and I especially love making my own.
The rest of Sunday included reading, laundry and fretting over another snow storm.
This was another low key weekend but it was also perfect!

Monday: Bootcamp – I near died.

Thursday: Snow day! 3 mile on the treadmill in the basement

Saturday: 30-minute cycle + BodyPump
This Week’s Menu
I am keeping things simple this week, lean proteins and lots of vegetables. SL and I are celebrating Valentine’s Day, our dating anniversary (6 years!) and my grandmother’s birthday this week so on the days we aren’t celebrating, I’m being a plain Jane.
Monday: Leftover roasted chicken, green beans + quinoa
Tuesday: A romantic Valentine’s Day pizza date!
Wednesday: Scallops, Strip Steak and marinated tomatoes
Thursday: Salmon, asparagus + quinoa
Friday: More leftover chicken over a monster beast salad
Saturday: Family dinner for my grandmother’s birthday!
Sunday: Cod, asparagus + quinoa
