Gooooood morning! I wish I could say happy Monday but I can’t, I’m not happy that it’s Monday. I had such a great weekend and was not ready for it to end.
In typical Monday fashion, I’m sharing my weekend as well as a recap of my workouts from last week and my dinner menu for this week.
By the time I got home from work on Friday, I easily could have just gone to bed and slept for 47 hours. Instead, I cooked dinner and hung out with the husband for the night.
I made Juli’s Picadillo Tacos – a huge hit at hacienda Lawson.
SL watched some sports game on TV (Bruins? Red Sox? I forget) while I read my book and we eventually called it a night.
Happy Earth Day! Sadly, the weather wasn’t awesome for this year’s Earth Day so I spent most of the day inside. SL and I went out for breakfast while we waiting for his car to get fixed.
I went all out. This also came with 3 slices of French toast. Luckily, they were more than happy to box up about half of it for me when I couldn’t finish it all.
While doing chores and meal prepping I started watching Netflix’s Girlboss. The ups and down of Sophia Amoruso and her company, Nasty Gal. This show is cute and great for a background show.
This documentary tells the story of Mike Dowd, a corrupt cop from the 75th district (in Brooklyn) who became just as dirty as the criminals he was supposed to be policing. I love a good crime documentary and this one did not disappoint.
Sunday morning started without an alarm (hands up emoji). SL and I got out of bed around 8:30 am and laced up for a quick run. We covered just over 3 miles.
The weather was perfect for a run, high 50s and sunny. My runs have been great lately. I still love running in my Brooks Launch 4s (I have two pairs) and I just feel like taking it a little bit slower has been working well for me.
Breakfast was my favorite breakfast burritos and some dragonfruit.
The weather on Sunday was beautiful so we took advantage and got some yard work done. We had so many sticks and branches fall this winter that had to be raked up and burned.
I just love our backyard!
After all of the work, we chilled for the rest of the night and watched Forgetting Sarah Marshall for the umpteenth time then called it a night.

Monday: Julie’s Chicken Sausage Sweet Potato Bake
Tuesday: Backed haddock with pineapple pico de gallo
Wednesday: Turmeric Cauliflower Rice with chicken
Friday: North African-Spiced Shrimp and Couscous (I was going to make this last week but didn’t)
Saturday: Leftovers / out / takeout – play it by ear
Sunday: Spaghetti squash with homemade sauce and meatballs
