Hello and happy Monday! I am oddly ready to conquer this week because 1) there is a long weekend ahead and 2) I am expecting (hoping? anticipating?) a new baby friend this week! Let’s just hope he arrives on (or near) his due date because I am so excited to meet him.
Let’s get into my weekend recap…
This weekend was one for the books. Saturday started early with a trip to the grocery store. Snow as in the forecast so I wanted to beat the crowds. I also needed to do a lot of food prep for this week so I had a lot to buy.
Late Saturday morning I went to a yoga workshop called Drop and Give Me Zen. It was 90 minutes and amazing. We focused on balance and twists to detox us from the craziness of the holiday season.
At some point during class, it started to snow and was coming down pretty hard on my drive home. We decided to hunker down for the rest of the day SL watched sports and I cooked ALL.THE.THINGS. I’m the worst and didn’t take any pictures but I made:
- Meatballs (1/2 beef 1/2 turkey) to vacuum seal and freeze
- Marinated 3 lbs. of chicken in 3 different marinades for the freezer
- Baked a spaghetti squash
- Roasted cauliflower, brussels sprouts and onions
- Made mini egg muffins
After the cooking whirlwind subsided, SL and I started watching The Man in the High Tower on Amazon Prime. It didn’t suck me in but it also didn’t bore me (like Westworld) so I’ll keep watching it.
We slept in on Sunday morning because we knew we had to shovel when we got up. Boooooo. Our house was blanketed with 8″ of the white stuff but luckily it was light and fluffy so I only had to shovel for an hour.
After a few more chores it was time to CROSS COUNTRY SKI!
We live in such an amazing area and there are tons of places to cross country ski. There were no less than 25 other people out on the trails we decided to ski.
We skied roughly 5 miles in just under 2 hours (wee took a few breaks) and had the best time despite the cold.
We were beat after the long ski and ended up at the Ipswich Ale Brewery. This was my first real test as 1) I am doing Dry January and 2) I am doing a DietBet. 😖
So I ordered a hot water with lemon and a seared scallop appetizer.
Both were delicious and as much as I wanted a glass of wine and wings or french fies, I was perfectly happy with what I got.
Weekly Workouts (last week)
Monday: 30 minute walk, .5 mile run, 10 minute kettlebell circuit (I was all over the place)
Tuesday: Yoga + 2 mile run
Wednesday: 45 minute cycle class
Thursday: 2 mile run
Friday: 400 m run / 20 KBS / 12 deadlifts // 5 rounds <– I loved this workout and will be doing it again!
Saturday: Yoga Detox Workshop
Sunday: Cross Country Skiing
On deck this week – yoga, 2 cycle classes, some treadmill miles and hopefully a Core, Buns + Guns class.
This Week’s Menu
Monday: Butternut Squash Turkey Chili
Tuesday: Baked Salmon and Asparagus
Wednesday: Panang Curry from PaleOMG – I made this on Saturday night kind of (was missing a few ingredients) so I want to make it again will all of the right stuff.
Thursday: Tray Dinner (Chicken and Brussels sprouts with onion)
Friday: Leftovers (hopefully we have leftovers. I hate cooking on Friday nights and am really trying to limit nights out to one a week)
Saturday: Date night? More leftovers? Create something amazing in the kitchen? We’ll see!
Sunday: Spaghetti Squash and zucchini noodles with my homemade sauce and meatballs (1/2 beef, 1/2 turkey) I had this last night and I LOVED it!
