Hello all and happy Monday! Did everyone have a good weekend? I sure did. This weekend actually felt like it didn’t rush by too quickly. I’m hoping this week rushes by as well because we have a concert to go to on Friday night and then a wide open weekend to enjoy!
But let me not get too ahead of myself. Here is how my weekend went.
You know what I did on Friday – chores. I did chores. So much laundry, so much kitchen cleaning. And do you know what my reward was? Dinner with my cousins-in-law and meeting their new Golden Retriever puppy!!!!
So worth getting all of my chores done!
I am the worst and took zero pictures at dinner or while playing with puppy Dexter.
Mea culpa and moving on.
Saturday morning started with a cycle sweat session. It was already very hot and humid at the studio so class was beyond sweaty. Luckily, my new Booty by Brabants leggings were up for challenge. No swass marks FTW.
After class, I went grocery shopping and came home to make an epic breakfast.
Siete Foods tortillas, 1 egg, 3/4 cup egg whites, 1/4 avocado, 2 small beets, 1 homemade breakfast sausage and sriracha
A little back story – I have been taking indoor cycle classes for about 10 years now and I still wear sneakers, not cycle shoes. Other the years people have suggested that a pair of cycle shoes will change the way I ride. I have always meant to get a pair but never got around to it.
Then on Wednesday morning, one of the cycle instructors who was taking class with me called me out on not having shoes and I finally decided to get a pair. 10 years later.
Now I have to wait until Wednesday to break them in. Boooooo.
Moving on, the rest of Saturday afternoon I meal prepped like a boss and read out on my porch. I finished My (Not So) Perfect Life by Sophie Kinsella and it was a nice, easy beach read. I’m still working my way through The Nightingale (which I really like) but needed a little fluffy book break.
When dinner rolled around I mixed up some chickpea pasta, chimichurri, roasted veggies and chicken meatballs. It was a hot mess of a dinner but tasted so so good. No picture because, again, hot mess.
With SL being out of town over the weekend, I took the opportunity to watch a RomCom on Saturday night. I Googled “best girly movies to watch on Netflix” and settled on I Give It A Year with Rose Byrne, Minnie Driver and Anna Faris (amongst others).
It was pretty predictable but exactly the type of movie I wanted to watch while home alone. There was one scene in the movie that actually had me in tears and keeled over laughing. If anyone has seen it, I’m sure you know what I am talking about. If you don’t – go watch it!
Run Club started up again on Sunday. Running hasn’t been part of my workout repertoire since the Parker River Half Marathon and Sunday was hot and sunny even at our 7:30 am start time. So yeah, this wasn’t my best run. It was one of my slowest.
No negative splits here (well, not really – the last little bit doesn’t count):
➡️ Mile 1 – 8:48 min/mile
➡️ Mile 2 – 8:59 min/mile
➡️ Mile 3 – 9:49 min/mile
➡️ Mile 4 – 10:36 min/mile
➡️ Last 0.42 miles – 10:10 min/mile
- Don’t go out too fast after not running for 6 weeks.
- When it’s hot as balls, just run slowly so you don’t die after 1 mile.
For some reason I thought it was a good idea to go right from Run Club to Core, Buns + Guns. WTF Emily? I haven’t done a double in a LONG time and I was struggling but I made it out alive and was more than ready for breakfast when I got home.
Surprise, surprise! I had eggs in tortillas with sriracha AGAIN! On Sunday, I paired my eggs with sautéed kale and beets.
On Sunday afternoon I headed to the beach for some vitamin D and vitamin sea.
The beach was packed which was no surprise because the weather was beautiful. I continued to read The Nightingale and am about halfway through now and still really like it. Now I just need more beach time to finish this book!
Sunday ended with eating a bunch of random meal prep things for dinner and watching Scandal. I started this show recently and am already most of the way through season 2.

This Week’s Menu
I did acupuncture for the first time last week and my acupuncturist told me to focus on eating bigger breakfasts and more blood building foods. I took this advice to heart when planning this week’s menu.
Monday (tonight!): Buffalo chicken meatballs, chimichurri farro + roasted vegetables (from the garden)
Tuesday: Baked chicken thighs, chimichurri farro + roasted vegetables (<– I made a huge batch of farro and roasted veggies)
Wednesday: Grilled sirloin steaks + eggplant
Thursday: Leftovers. We will be out of town for the weekend so I want to make sure our fridge is close to empty.
Friday: OUT for the concert
Saturday: Wing it!
Sunday: Homemade meat sauce with spaghetti squash
