Even with a 4.5 day weekend, I was not ready for Monday to come. Yesterday my mom and I were chatting about dreading Monday coming. Woof. So what is the best way to get over the fact that its already Monday? To talk about the weekend and pretend that Monday isn’t happening!
So here is my Thanksgiving weekend recap:
Luckily, both SL I had Friday off and could enjoy a day off with my husband. I started my day with a workout which was much needed after enjoying every minute (and every bite) of Thanksgiving.
After class, SL and I went to the local orchard to buy cider so SL can make hard cider. I also grabbed some cider just to drink as is and a bunch of apples.
I spent the rest of the day cooking and relaxing. We had an early dinner at the local Mexican restaurant then started watching The People v. O. J. Simpson. We are only 2 episodes in and I am already hooked. I was only 10 when it all happened but I remember coming home from summer camp and watching coverage on TV with my Nan.
I feel like my whole life lately has been centered around true crime entertainment and I don’t hate it!
I tried out a new waffle mix and I am pleased to say that it is delicious. Every Bob’s Red Mill product I’ve tried has been great and I am slowly switching all of my pantry items over to BRM.
I meal prepped for a while on Saturday afternoon making chili, egg muffins and mini Tone It Up Blondie muffins which have chickpeas and almond butter and are amazing.
I begrudgingly helped SL clean our gutters which was not fun but I’m glad its done.
For some weird reason, I was in a baking mood so I whipped up these cookies. I used leftover Hershey bars from Halloween so they aren’t Paleo but they are good and I ended up eating a few throughout the day.
Saturday night looked a lot like Friday night -The People v. O. J. Simpson on the couch.
Sunday started as most do these days – with a Core, Buns + Guns class.
After class, then I had a fun coffee date with my bestie and another good friend and her kiddo. We chatted for about an hour then I headed home to watch the Patriots game. Another great win!
The rest of Sunday was lazy and relaxing. We ate chili for dinner that I made on Friday and we watched Shameless before hitting the sheets early. The weekend went by far too quickly 😒
I like to share my weekly workouts and menus on Mondays because it makes me feel like I have my shit together. So here you go…
Weekly Workouts (last week)
Things got mostly back on track last week. I am looking forward to going back to OTF this week (tonight!) and hopefully a pilates class (pending I can get out of bed super early on Thursday).
Monday – Wednesday: Rest
Thursday: Hot Stuffing! This was a 50-minute class including a warm-up, 15-20 minutes on the bike then 15-20 minutes doing weight circuits on the floor. Class went by so fast and I torched almost 500 calories (according to my Apple watch).
Friday: Xtraining class. This class was a mix of simple cardio and lots of lifting
Saturday: 40-minute walk on the treadmill. I used the time to catch up on Instagram stories and some YouTube videos.
Sunday: Core, Buns + Guns class
This Week’s Menu
Indulging has been fun this past week but I need to get back into gear. My freezer is chock full of healthy stuff to eat this week and I will be taking full advantage.
Monday (tonight!): Haddock en Papillote (I will roughly use Lexi’s recipe but haddock instead of salmon)
Tuesday: Chickpea pasta with homemade sauce and salad
Friday: Hopefully more leftovers!
Saturday – Sunday: I’ll figure it out then…
