Yesterday started out with a 7:15 am Orangetheory class which I loved because it was only 45 minutes! What I didn’t love – I was late and grabbed my wrong HRM so I didn’t get any stats. Does an OTF class even count if you don’t have stats? The answer is yes because this workout was hard. It counted.
Once I got to work, I finally made myself breakfast.
Breakfast: Coleman chicken sausage (1/2 Italian and 1/2 apple – I’m an indecisive Libra), avocado toast on Ezekiel bread with Trader Joe’s Everything but the Bagel Sesame Seasoning Blend. I am so in love with this stuff!
AM Snack: The last delicious serving of Golden Soup. I will be making this again.
Lunch: Chili Garlic Instant Pot Noodles (thanks to Sunday meal prep)
PM Snack: I’ve been loving the combination of black bean hummus, cucumber and GG crackers lately.
It’s just enough food to hold me over until dinner.
Dinner: Meal-prepped chicken drumsticks and chickpea pasta with homemade sauce.
The chicken and the pasta were supposed to be two separate meals but they morphed together after my MIL gave SL a ton of food on Monday which we ate Monday night, throwing off my whole schedule. Oh, you don’t care? Moving on.
These chicken drumsticks are super easy to make and are delicious.
- Put drumsticks (I got mine from Butcher Box) in a big bowl or zipper top bag.
- Add some oil to lightly coat.
- Add spices of your choosing and mix around thoroughly (I used Primal Palate Amore)
- Bake at 425° for 40-45 minutes until cooked through.
