Good morning and happy hump day! Today I am sharing yesterday’s eats for another edition of What I Ate Wednesday.
Although many of my day’s eats look very similar, I still love to share what I am cooking and eating. I also love to look at other people’s daily eats to get ideas. I fall into breakfast and snack ruts (eating the same thing every day for weeks) so getting new ideas is very important to me.
With all of that said, here is this week’s What I Ate Wednesday.
What I Ate Wednesday
Breakfast: I am officially back on a smoothie bowl kick.
This smoothie bowl keeps things simple – 1 cup almond milk, 1/2 frozen banana, 1/4 avocado, 1 scoop vanilla protein powder, dash of cinnamon. I topped it with homemade crumbled almond butter “cookies” for some extra fun.
AM Snack: Around 10:30 am I dug into some grapefruit. I was starting to get hungry as the smoothie bowl didn’t quite hold me over until lunch.
Lunch: Lunch came together quickly as it was just leftovers from Easter that my mom graciously let me take home. I didn’t snap a picture but it looked a lot like my Easter day plate (below).
PM snack: Sometimes you just have to have a serving (or two) of your favorite tortilla chips to get through the day.
I had to run to Whole Foods to stock up on tortillas (because I ate so many this weekend) and I couldn’t pass up a bag of the Siete Foods Tortilla chips. I ate a few on the way back to the office. I could have eaten the whole bag but forced myself not to.
Dinner: After such a crazy work day, I was excited to have one more Blue Apron recipe to make from my delivery last week.
I made the Za’atar-Spice Chicken with pearl couscous and lemon pan sauce. It was really good and came together quickly which was exactly what I needed after a hectic work day.
The night ended with a glass of wine and an episode of The Young Pope on the couch with SL. I was beyond tired thanks to the 5:00 am wake up call for Tuesday morning yoga so bedtime came right around 10:00 am.
