Hello! I’m coming at you from a rainy day here in my hood. Luckily, my day started with the best yoga class and I feel like a million bucks.
I have a lot of work to do today so I’m going to get right to the fun stuff – food!
Look at that hot mess. Photography skills on point 📸
This hot mess is a mix of chicken (from Butcher Box), leftover rice and Thai Coconut Curry Butternut Squash Soup. I woke up so sore yesterday morning thanks to OTF on Sunday and CB+G yesterday and there was something about a comforting bowl of soup for breakfast that made me happy.
With my soup a had a tall glass of lemon water and a mug of Four Sigmatic Lion’s Mane & Chaga Mushroom Coffee Mix. I buy mine from Thrive Market (<– use this link to get 25% off your first order).
Lunch: Mezze plate
Mary’s Gone Crackers Everything crackers, Taboule, homemade curry hummus, cucumbers from the garden and kalamata olives
What do you do when you don’t want to cook your own lunch and you don’t want to leave the house? Mezze plate! I’ve been putting these together for lunches or afternoon snacks a lot this summer. Basically, anything from the fridge works on a mezze plate!
Dinner: Fish, steak, eggplant, sweet potato fries
Here is yet another random meal of things that I found in the fridge and mixed together to create a meal. This is actually SL’s plate because mine looked a little dodgier. My plate had less steak, more fish and less sweet potato fries.
After dinner, SL and I both had a piece of blueberry pie thanks to his mom who made it for us. I didn’t take any pictures because I ate it so quickly!
And that was that. Now that I work from home, I am working on figuring out my groove in terms of breakfasts and lunches. I have the freedom to cook myself 3 meals a day but do I really want to cook three meals a day? No, I don’t.
My meal prep game has been off this summer because its summer and there are better things to do. Once fall rolls around I know I’ll get back in my prep groove.
Have a great Wednesday!
