It’s Monday again, not cool. But its also Thanksgiving week which means a short work week from moi! What are your Thanksgiving plans? Traveling? Hosting? Boycotting? SL and I are headed to my parent’s house for a low key holiday and hopefully, there are lots of leftovers!
Here is my recap of my weekend which including a facial, a workout and a movie.
Errrrr…I can’t remember that far back. I believe we got takeout and just hung out. We also probably went to bed early. Living my best life over here!
Can I start every Saturday with a facial? I had the most relaxing facial on Saturday at my local spa/salon. It felt amazing and thanks to a 25% off discount and a gift card, I walked out only paying $34. Boom!
After the facial, I went grocery shopping, came home, made breakfast and started to do some meal-prep-light. I cooked up some pork chops for lunches this week and roasted green beans for a recipe I planned to make on Sunday.
My energy was high so I decided to hop on the treadmill for a SLOW run. Like SUPER SLOW. I haven’t run in weeks (months?) so I didn’t want to overdo it. It felt good running again so I think it’s time to get back into it.
I spent the rest of the afternoon relaxing, reading and avoiding doing any more chores.
SL and I had an easy dinner of meal prepped pork chops and green beans and spent the rest of the evening watching Shameless on the couch. I’ve been so sick of my own cooking lately that I barely ate much. I really looking forward to Thanksgiving leftovers because my mom is cooking and I never get sick of her food!
Saturday night came to a close just after 10:30 pm when I went to bed. Old lady up in here! 👵🏼
After a week of little to no workouts, I started Sunday off right at Core, Buns + Guns.
We used all sorts of props for this class and it ended up going by super fast. According to my Apple watch, I burned just under 300 calories. Not bad for a zero cardio class!
I came home and got right in the kitchen. I made Lexi’s Green Bean Casserole.
OMG – where has this been all of my life? The recipe is dairy green which is perfect for me! The creaminess comes from cashew cream which ended up being incredibly easy to make.
Lexi’s recipe calls for making homemade onion crisps which I couldn’t be bothered with so I bought some crispy onions from Whole Foods.
I’ll be making this again (and again and again) very shortly.
SL played flag football with friends so I waited to have real breakfast/lunch/brunch until he got home then we chilled for a bit. I ended up finishing the girl before and totally didn’t see the end coming.
Any suggestions on something to read next? I love either beachy reads or thrillers that aren’t gory.
Sunday night SL and I went to see Warren Miller’s Line of Decent and it was great.
Not that I am ready for the snowy winter to come but now I am ready for ski season! After the show, we ate pho then went home and watched a little football before bed.
All and all, I had a great weekend and we glad to actually make it out of the house for a few things.

Weekly Workouts (last week)
So this week was much like last week in that nothing really happened. I’ve been in a huge workout funk but I’m going to get out of it next week and get back to my normal self. Promise.
Monday: 30-minute walk
Tuesday – Friday: Nada
Saturday: 2-mile treadmill run
Sunday: Core, Buns + Guns class

Obviously, this week is not the norm with Thanksgiving being on Thursday but I’m still planning on cooking two nights.
Monday (tonight!): Leftovers from weeknd meal prep
Tuesday: Korean Beef Tacos. Something along these lines.
Wednesday: Indian Butter Chicken
Thursday: Happy Thanksgiving!
Friday: Happy Thanksgiving leftovers!
Saturday – Sunday: I’ll figure it out then…
