Hello hello. Somehow it’s Monday again.
It’s cool though because its not like a real Monday, its a cool Monday. Anyone? Anyone?
Happy MLK to you all!
Although I am working today (#freelancelife), SL is not so I am planning on taking a super long lunch to hang out with my favorite guy.
Enough about today, let’s talk about the weekend, shall we?
I kicked off the weekend by cooking dinner on Friday night. I picked up pre-cooked pork belly at Trader Joe’s last week and figured pork belly tacos would be a great way to kick off the weekend. I referenced PaleOMG’s pork belly taco recipe but made a few changes based on what we had in the house.
While eating our tacos we started watching Surviving R. Kelly.
#MUTERKELLY is all I can say. What a monster.
Saturday was a bit of a tough day as it was spent at my grandfather’s funeral. I haven’t talked much about it here but I lost but of grandparents (my mom’s parents) in a 4-week span. The holidays fell in the middle of this 4-week span which is why I was more than happy for this particular holiday season to be over with.
Losing my grandmother was a complete shock but losing my grandfather was more of a blessing. He had been suffering from dementia for a number a years and it was so difficult to see him struggle.
This silver lining coming from all of this loss is that fact that they didn’t have to be apart for too long. Just 4 weeks (to the day).
We were supposed to head to a birthday party on Saturday night but I just didn’t have it in my so we got takeout and finished watching Surviving R. Kelly.
On Sunday, we woke up to lots of snow. Our first real snow storm of the season dumped six or so inches of snow then another inch or so of freezing rain which immediately froze. So it was a mess and I didn’t leave the house.
I finished reading When the Lights Go out by Mary Kubica and though I didn’t love the way it ended I liked the book overall.
The rest of the day included chores and football.
The Patriots game gave me 4-5 panic attacks but it ended with Patriots win!!!
Heading back to the SUPERBOWL!!! I cannot believe it!
During the game, I had to distract myself a little so I didn’t explode so I started reading The Identicals by Elin Hilderbrand.
Elin is considered the queen of the beach read which is just what I needed – something light.
Once my adrenaline subsided I finally went to bed but it was way past my bedtime!
Weekly Workouts (last week)
I switched things up a little last week and I was sore a few days so I guess it was worth it.
Monday: Core, Buns + Guns
Tuesday: BURN – A 45-minute circuit class
Wednesday: Yoga 🧘♀️
Friday: Bootcamp – Woof, I haven’t taken a bootcamp class in ages and it kicked my butt.
This Week’s Menu
We are low on our Butcher Box supply so I poked around at Trader Joe’s a bit and found a few fun items to try.
Monday (tonight!): Spiced Keema bowls (with shredded carrots, scallions and rice over greens)
Tuesday: (Homemade) Taco Tuesday!
Wednesday: Cast iron grilled steak with roasted potatoes and salad
Thursday – Saturday: SL won’t be around so I’ll be on my own for dinner. I will probably make curry at least one night and I have a polenta recipe I want to test out.
Sunday: The Sunday night staple – homemade sauce and Jovial Foods pasta + salad
