Good morning! Mother Nature has been quite the little bitch over the past four days. Thursday and Friday were sunny and 70° – perfection! Saturday morning was gray, then it rained, then the sun came out but it was still cold. Sunday it snowed in the morning and was sunny in the afternoon.
Now come Monday, it’s snowing and cold again. Ugh. I was quite happy with the sunny and 70° weather. Let’s bring that back. And let’s bring the weekend back too!
Although the weekend didn’t officially start until after work on Friday, lunch of Friday consisted of fun co-workers and sushi so I had to include it! I order the Samurai roll (shrimp tempura, cucumber, eel, avocado) and an un-pictured shrimp and asparagus roll.
Once the work day ended I headed home to clean up a little because we were expecting company!
We were delighted to host a gathering for friends who were up from Texas to visit. They brought their sweet-as-can-be 8-month old son along and we provided ALL of the Thai food imaginable.
Saturday morning started slow as we all stayed up way too late drinking wine, chatting and playing ping pong in the basement. I whipped up waffles and bacon for SL and made myself avocado
toast waffle topped with bacon and it was so delicious. I had a few scrambled egg whites on the side as well.
I’ve eaten roughly a bushel of avocados (mostly on toast) over the past couple weeks. I just can’t stop.
Saturday was also our 6 month wedding anniversary!

We spent the majority of the day at the lumberyard picking out stuff for our kitchen remodel. Super romantic and exactly what I wanted to be doing. 😒
For dinner, we met up with a large group for dinner at a new-to-us Chinese restaurant a few towns over. After Friday night’s epic Thai feast, I wasn’t in feasting mode again so I stuck with soup – Szechuan Noodle Soup to be exact. It was good, nothing to write home about though.
Sunday was supposed to start with my first Studio 5 run club but it was snowing and very windy so it got cancelled and will start next week. I am still really looking forward to it!
Instead, I took my usual two classes (Cycle + Core, Buns and Guns). It felt good to workout out after taking Saturday off. Post class, I went to the grocery store next door to the studio and ran into no less that 4 other ladies from class. I guess we were all on the same schedule.
While SL and our friend/neighbor were making much needed kitchen updates, I did what any good wife/friend/neighbor would do and hid in the bedroom and almost finished reading Playing Big. I am so close to finishing and have loved this book.
After I got my kitchen back I went into full on Sunday Food Prep mode.
Sunday Food Prep
4 words – Chicken Bacon Breakfast Strata.
So f-ing good!
I used my regular old breakfast strata recipe but switch out the base and switched out out the meat. I can’t believe I didn’t take a picture because this was the most beautiful strata I have ever made!
I also made chili (with beef and turkey) for lunches and Chocolate Banana Bread Muffins for snacks.
Then after all of that cooking, I made dinner.
Sunday night dinner came courtesy of Blue Apron. I was a little nervous about this one but it turned out amazing (as they always do).

This steak and eggs meal was served over kimchi fried rice and is definitely something I would make again. SL loved it too which isn’t always the case with some of the creations I put in front of him.
We capped off the night with 2 episodes of House of Cards and went to bed early-ish.
