Happy Monday! I can’t say that I am excited that the weekend is over but I had a great couple days to myself with SL gone and I got a lot done.
Aside from the normal chores (that I have neglected the past two weekends) I noted a few things in Friday’s post that I wanted to do over the weekend and I was mostly successful.
Get pho – complete!
Friday night was for pho! SL loves pho too so I felt a little guilty getting it without him but I’ve been craving it for weeks. Craving it to the point that I was looking into trips to Vietnam…someday.
I opted for the House Special which basically has everything. Beef, meatballs, brisket, beef broth, veggies. It was spectacular!
Use my juicer – fail
There are so many pieces and quite honestly, I didn’t want to deal with the cleanup.

Ruth Reichl is an amazing story teller and every time I pick up this book, its very hard to put down. I am about 3/4 of the way through the book and plan on finishing it this week. Hopefully one of the other books I have on hold at the library becomes available!
Watch a super girly movie or documentary that SL would hate – complete x2
On Friday night I watched See You In Valhalla which I thought would be more of a rom-com but it was not. I teared up numerous times. I chose it because Sarah Hyland was in it and I could always use more Haley Dunphy in my life. There was really nothing good or bad to report about this movie. I would give a 3 out of 5.
On Saturday I watched The Best of Me which was adapted from a Nicholas Sparks books. I knew this would be a tear jerker but I went for it and it ended up being a little too heavy for my mood that night. I finished about half before switching over to watching something a little lighter (Modern Family). I finished the movie on Sunday afternoon while doing my chores and it was depressing. Overall, another 3 out of 5.
An yes, SL would have hated both of them.
Organize ideas for Ireland trip – complete!
I have two restaurants I want to try, found a VPN to use and read a bit about day trips from Dublin. Not everything is set in stone but I feel like I am in a better spot.
I love to plan travel and happily do it all for our trips. I also love packing and will start to research what to pack and wear in Ireland in the fall.
Cook something new – complete!
I made homefries in my waffle iron which is something I have been wanting to do for a while now. I loosely used this recipe but forgot to add the olive oil. I am planning on making them again to perfect my version of the recipe.
Other than completely all of my self-imposed tasks, I spent time at the beach…
got in a couple workouts, made a couple epic breakfasts (acai bowl with dragonfruit, kiwi and coconut flakes and avocado toast, egg whites and chicken sausage)
Saturday night there was an epic rainbow right outside of my house. I took about a million pictures but none of them really do it justice. I’ll just let you picture it!
