Hello hello and happy Monday. Today is the second day of spring and it’s snowing. It’s snowing enough that I am working from home today. I haven’t shared a weekend recap in quite some time and figured this past weekend won’t completely bored people to death.
SL and I both worked from home on Friday because something VERY exciting happened. We got new granite countertops!!
You know you are an adult when we get excited about countertops.
Friday started with a 7:00 am HIIT cycle class. This class is super quick and there are lots on sprints and jumps on the bike. I left nice and sweaty and headed home to work until the countertops arrived.
I love them and I was so excited to be able to get back in the kitchen and cook!
I made a huge batch and cut it into 12 pieces so I could enjoy it all week. Strata makes the absolute easiest breakfast on the go for weekday mornings when I am almost always rushing out of the house.
After some chores, SL and I headed out to a wine tasting 😄 We were able to try lots of wines and left with a case of assorted reds and one Sauvy B for yours truly.
I am really excited for the Sparkling Shiraz and the bubbly Rosé! These seem like amazing boat and breach drinks for the summer. I was also excited to find some delicious red table wines (aka cheap but really good).
After the tasting we went to a friend’s house for a cookout and some March Madness basketball before heading home.
Sunday morning started as it always does with a trip to Studio 5 for a cycle class and a Core, Buns + Guns class. Both were amazing and I left a sweaty mess and headed right to the grocery store. Sorry fellow shoppers. I bought almost the whole store and was ready for a full day of food prep once I got home.
Here is what I prepped for the week:
- Cut up 5 grapefruits for snacks
- Made carrot, celery and cucumber baggies and portioned out hummus for snacks
- Cooked hard boiled eggs for snacks
Chicken quarters // prunes // green olives // garlic
After dinner, SL and I watched a couple more episodes of House of Cards before turning in for the night.
Now it’s time to tackle the week head on.
