Good morning and happy Monday. Although I am not ready for the weekend to be over and I ready to start this week. I have a bunch of fun posts to share on the blog this week so stay tuned!
Before I get too far ahead of myself, I wanted to share a few tidbits about the my weekend.
Friday night I forced SL to run a 5 mile road race with me. I will post the full recap tomorrow but for now I’ll tell you that it was a beautiful race and I didn’t die. We can leave it at that.
After the race we enjoyed a complementary BBQ but it was COLD out so we ducked out early. On the way home we were both still a little hungry and stopped at a Chinese restaurant for soup. Best idea ever! I opted for soul-warming wonton soup and SL got a bowl of hot and sour soup. It was the perfect way to close out the work week.
This was the fortune in my cookie and I couldn’t agree more.
I told SL as we went to bed on Friday night that I was planning on sleeping in and then getting up and making waffles in the morning. What self-respecting husband wouldn’t be on board with this? Although I woke up early, before 7:00 am, I stayed in bed and read my book (still working on Pretty Girls) until around 9:00.
Like promised, I made waffles and bacon and put together my latest favorite weekend breakfast – avocado waffles with bacon!
So good! I also had some scrambled egg whites on the side for some protein power.
After breakfast, I lounged a bit while working on my meal plan for the week and my grocery list. I wanted to get all the shopping and food prep done on Saturday so I could spend time with my mom on Sunday.
Before I knew it, it was almost Derby time! SL and I have hosted big Kentucky Derby parties in the past but just didn’t feel like it this year. Instead, we went down to our favorite bar and watched from there with a round of drinks. On our way home, we picked up more soup (it was a soup-weather weekend) for dinner and watched a couple episodes of House of Cards for turning in.
I was back at Run Club on Sunday morning! I have really been loving this Sunday morning tradition and was more than happy to get up early to meet all of the ladies for our run.
My legs, on the other hand, were not as excited. I had the slowest run almost ever! I wasn’t in any sort of pain but I was just SLOW. We went out on a almost 4 mile loop and it was the perfect running weather.
Mile 1 – 9:30 min/mile
Mile 2 – 9:33 min/mile
Mile 3 – 9:58 min/mile
Last 0.68 mile – 9:03 min/mile
Total – 3.68 miles // 35:10 mins // 9:34 min/mile
Yes, this was slow. But I did it and I am happy I got out there.
I went home, made myself a cup of coffee, ate some strata and headed back out for Core, Buns + Guns. I love this class and despite being tired after my slow run, I didn’t want to miss class. #fitnessismyhobby
The rest of Sunday was spent with my mom, doing laundry and hydrating like a beast. I made spaghetti and sauce for dinner with a HUGE salad and garlic
bread english muffins.
We watched Game of Thrones on the couch and went to bed early. Typical Sunday night in my house.
