Is it too late to discuss the weekend? I hope not because I really lived my best life this past weekend.
On Saturday, SL and I drove to my parent’s camp in Maine and while SL golfed with my dad, uncle and brother-in-law, I hung out with my niece and my mom. My niece is the absolute best. I even let her eat half of my sandwich and my pickle. That’s love!
On Sunday, SL and I slept in (in the tent) then went on to have the best day.
We went to a late breakfast at Beth’s where I got duck hash with homemade marble toast. It was so good!
After breakfast, we went for a short hike with some seriously stunning views.
I love this part of the world so much and always feel my best when I am there.
We got back to camp and after reading on the beach for a little bit, my dad took me water skiing! I was a little rusty but still got up on my first try and skied for a while. We spent the rest of the afternoon back on the beach then out in the boat again before driving home.
It as a perfect Sunday. And now it is Wednesday.
Might as well share what I ate.
SL had the gall to complain that we eat the same things all of the time. HOW DARE HE?! We do not eat the same thing all of the time but this summer I have been a little lazy in terms of making staples vs. trying something new.
Anyways, I decided to make a Taco Lasagna Casserole for dinner on Monday and had leftovers for breakfast yesterday.
Also on Monday, I made another Paleo crust pizza with lots of veggies and with Butcher Box sausage and had it for lunch yesterday (and Monday and it will be my lunch today).

By the time dinner came around, I was in the mood for something with an Asian flair. Mexican for breakfast, Italian for lunch and Asian for dinner. Legit the perfect day of eats for me.
This meal was a mash up a few recipes and included bells peppers and eggplant from my garden, Butcher Box top round sirloin (sliced thinly) and a coconut aminos-based sauce. I served it over some basmati rice.
It was so good and I will be making it again. I think this would also be really good with a few cashews thrown in there.
Now its time to get to work. We have friends coming in LATE tonight so the next few days will be a mix of some work and some fun.
