Good morning and congratulations for making it to the hump! 🐪 Today I am sharing a What I Ate Wednesday post and a fun, quick workout.
I haven’t written a What I Ate Wednesday post in ages and thought it would be fun to document what I ate yesterday. For the most part, I ate the same thing every day for Meals 1-4 (Meals 2 & 4 are snacks) then I switch is up for dinner.
What I Ate Wednesday
Meal 1 – Breakfast: Before work, I heated up Breakfast Strata just like I do every other morning. I am super routine when it comes to breakfast. Strata is easy, portable and delicious. I also chugged a glass of water because I was feeling very dehydrated.
Meal 2 – Morning Snack: Grapefruit. Almost every Sunday I buy 5 grapefruits and prep them for my weekday mid-morning snack. I feel like grapefruit is a love or hate type of thing. I love it
Meal 3 – Lunch: Hamburger Soup from the Pioneer Women Dinnertime Cookbook. I am slowly but steadily cooking my way through this cookbook and I have loved every recipe! File this under one of the best Christmas gifts I’ve gotten (Thanks Mom!)
Along with this super cute purple potatoes, this soup has every color bell pepper, celery, onion, ground beef, ground turkey, celery, carrots and tomatoes. Loads of veggies and meat – perfect for me.

Meal 4 – Afternoon Snack: Veggies and hummus. To be more specific baby carrots and celery with spicy black bean hummus. One of my friends refers to it as black bean crack and he isn’t too far off.
Meal 5 – Dinner: I got a Blue Apron delivery this week specifically for this recipe – Blue Apron Chicken Steam Buns with Radish & Cucumber Kimchi. I accidentally forgot to cancel one a few weeks ago and I am so happy I did because there was a steam bun recipe. When I saw this steam bun recipe, I couldn’t pass it up.
The recipe card stated to serve the extra kimchi on the side but I decided to one up the card and serve it on the side over a leafy, green bed of power greens.
I really loved this recipe. Actually, there hasn’t been a Blue Apron recipe that I haven’t loved. I am excited for the other two dishes in this week’s delivery.
And that was it for food. This was a VERY typical day for me as I am just so routine when it comes to food.
This workout was inspired but a lunchtime workout I did a couple weeks ago. I have been doing a lot of tabata-like classes lately and have loved getting in quick, sweaty workouts.
