Hello and happy hump day! It’s still morning and yet all day I’ve thought it was Thursday. Whomp, whomp. This morning started with spin class and a repeat of the breakfast I’ve been having all week.
I love peering into other people’s lives and seeing what they eat which I why I love What I Ate Wednesday! So here are my eats from yesterday.
What I Ate Wednesday
Tuna mixed with guacamole served open-faced on a slice of sesame Ezekiel bread with sriracha. It looked ugly AF!!
So no picture but this is the tuna I used. I got it from Thrive Market (<– referral link) and it’s delicious.
I also had an unpictured coffee with collagen and this apple cider vinegar drink.
Breakfast kept me held over until about 11:30 when I was ready for a little something before lunch.

Everyone at worked laughed at my “muffins” because they looked more like coins. Maybe my baking soda is expired and that’s why they are super flat? Oh well, they still tasted great.
Leftover homemade sweet potato fries and chicken thigh (plain) with a side kale “salad.”
Question – Is is still called a salad if its only one ingredient?
I didn’t even put dressing on it so it was literally just a couple handfuls of kale. I also had a bottle of my favorite kombucha with lunch.
Around 4:00 I reached for my snack which was 1/2 of a cucumber and spicy black bean hummus (my fav!).
By the time I got home from work I was starving! The menu for last night got switched up and I ended up baking salmon, asparagus, carrot in a tin foil pouch in the over for 25 minutes then served it over a bed of kale.
Despite the retched photo, this meal was delicious and was super easy to make.
So there is it, a day of eats. Yesterday was a low calorie day for me and I only took a yoga class and didn’t get much activity in otherwise. I am also finishing up my DietBet and I want to keep this week’s eats as lean as possible (which still getting enough cals to fuel me).
