Good morning and happy hump day. Today’s What I Ate Wednesday is brought to you by meal prep! I have been super boring this week and have had that same thing for breakfast, lunch and snacks every day so far. And all of this food was thanks in big part to meal prep!

What I Ate Wednesday – Meal Prep Style
Breakfast – Eggwhite scramble. I made a big batch on Sunday and have been eating them every day so far this week. I didn’t take any pictures but it looked a little something like this…
AM Snack – Two Cinnamon Date Mini Muffins and (unpictured) raspberries.
These muffins were a result of meal prep two weekends ago and are still moist and delicious.
Lunch – Moroccan Stew leftovers. Last Sunday I made a big old batch of Moroccan Stew from the Tone It Up plan and have been eating it for lunch all week. No pictures – it was ugly.
PM Snack – Kombucha.
And then an Epic bar too…
Dinner – Cajun Shrimp & Veggies also from the Tone It Up plan. This was the only meal I didn’t prep for. Shrimp cooks up really quickly as do the veggies. No prep needed!
The plan said to serve it with quinoa but I was feeling more of a Taco Tuesday vibe so I threw the mix above into two Siete Foods tortillas.
After dinner, I had some unpictured chips and salsa for “dessert”!
3 Steps to Meal Prep
Make a Plan
Have you ever heard the phase, “Failing to plan is planning to fail.” Of course you have. Everyone has. So the logical first step to meal prep is making a plan. Making a plan has three steps too, how quaint.
- Pick a day of the week. For me its usually Saturday or Sunday and I make sure no other plans get in the way.
- Create a menu for the week. My menu includes all meals and snacks and is super in depth. If you are new to meal prep, I would suggest just starting with dinners for the week.
- Take inventory of what you already have then make a grocery list. Having a list when you are at the stores helps you stay on track (and not forget anything!)
Do the Meal Prep Prep
This is where your planning from step one goes into action. It’s time to hit up the grocery store. Don’t forget your list!
Bonus: Clean your kitchen before the madness starts. Having a clean and organized kitchen means you can jump right in when you get home from the store.
Go to work!
This is the hard/fun part. Write down everything you want to make during your meal prep day then arrange them in an order that makes sense. Get out the tools that you will need and start cooking!
If I am making something in the crockpot, I will always start that first because I know it takes the longest time to make. If I have two things going in the oven, I make sure to prep one while the other is already cooking.
Meal prep can be easy as long as you are organized!
