Good morning and happy hump day! It’s been a hot minute since I checked in here because my life has been boring lately and I’ve been uninspired to write about it.
I’m looking forward to this weekend because I’ll be heading up to Maine to hang out with my parents and celebrate my mom’s birthday. SL has class but he is in the home stretch (for the summer) and we will have more weekend days to do fun thing after next weekend.
Enough about the weekend. Let’s take a look at what I ate yesterday.
What I Ate Wednesday
Breakfast: Egg white, bacon and avocado toast sprinkled with salt, pepper and cayenne.
This is usually a weekend breakfast but I had some leftover bacon so I was able to quickly pull this one together on a Tuesday morning.
Usually I eat a morning snack but I wasn’t hungry at all until lunchtime which is shocking.
Lunch: Open-face tun sandwiches on Ezekiel bread with a side of (unpictured) Coconut Curry Summer Squash soup.
Tuna “Recipe” (makes 3 servings) – 2 pouches of tuna in water, 1/2 avocado, juice of 1/2 a lemon, spices (I used S&P, cayenne and cumin). Mash it all together and plop it on toast bread. Done and done.
My garden is producing summer squash like crazy and I’ve been loving finding fun ways to use it. If anyone has any fun summer squash recipes, leave me a note in the comments!
PM Snack: On my drive home from work I was starving and luckily had a Larabar in my purse. Honestly, I almost always have a Larabar in my purse.
Dinner: Shrimp & Gnocchi with corn, basil and cherry tomatoes via Blue Apron
I was so excited to try this Blue Apron recipe and it did not disappoint. The meal came together in under 30 minutes and was the perfect amount of food for SL and I.
This was my first Blue Apron order in a while and it was much needed. Sometimes, I just don’t want to make and shop for a whole week’s menu and this weeks was one those weeks.
I’m looking forward to a chicken and panzanella salad recipe and a beef pita recipe this week as well.
