Oh hey. How is it not Friday yet? This week has seriously just been a string of WTF days. I’m already daydreaming about the weekend and about our next vacation. SL and I are heading to Denver in June and I am so excited.
Being that planner that I am, I already found an Orangetheory and a Whole Foods that I can walk to from our hotel. Did I google bars in the area? Nope! Did I google things to do in Denver? Nope. I googled where to take a fitness class then where to get food after. Ugh…I’m the worst!
With all of that said, I suppose it make perfect sense to continue to talk about food and look a day in the life of my eats. Yesterday wasn’t the most healthy day but it’s real life.
What I Ate Wednesday
Breakfast: 3 egg muffins + Ezekiel toast with pesto. Obviously I forgot to take a picture until I was well on my way to finishing breakfast but hey – I got one!
AM Snack: Around 10:30 I was more than ready for a snack. Grapefruit was the perfect little snack to get me to lunch.
Lunch: Basil Chicken in Coconut Curry Sauce that I made on Sunday.
This dish is not as beautiful after it’s cooked! All of the colors kind of meld together and it’s soupy and looks very unappetizing.
PM Snack: I knew I would be having a late dinner so on my way to get my hair done, I ate a Cashew Cookie Larabar.
Dinner: Dinner was a raccoon meal and I scarfed it down without taking any pictures. A raccoon meal is me heating up all sorts of leftovers and eating them as if they belonged together.
My dinner included pearl couscous, baked chicken (leftover from Sunday) and pizza (leftover from Saturday). What it didn’t include was vegetables. By the time I got home (close to 9:0 pm) I was starving and not interested in caring about making sure I ate a veggie.
After dinner I ate a couple squares of my new favorite dark chocolate.
And with that, my day of eats was over.
