Happy hump day! This week has been the longest. This month has been the longest. It has to be like January 84th. Right?! That said, I can’t believe that Friday is February 1st. 🤯
Today I wanted to share a little bit about food and a little bit about my day. I have written a few Day in the Life (DITL) posts in the past and love to look back on them to see where I was at that point in time:
Today’s is a little different because it involves less about work and more about food. Nothing like a good old WIAW+DITL.
What I Ate Wednesday + Day in the Life: Winter 2019
6:15 am – Get up and take the dog out with a quick walk. We are dogsitting this week and its going to be cold and snowy. Super.
6:30 am – Get SL’s stuff ready (yes, I make him breakfast, lunch and coffee to take to work – #bestwife).
6:45 am – Say bye to SL and make myself a coffee. I started writing this post while sipping coffee then wrote yesterday’s post. I would love to spend more time here on AEH and I realized I just need to make time for myself to do so.
7:30 am – Time for breakfast (for the dog and myself). Yesterday’s breakfast was Lemon Chicken Soup with Orzo from Pinch of Yum.
I am a HUGE fan of avgolemono soup and this recipe was as close as it gets. Is it weird to eat soup for breakfast? I honestly do it a lot. Especially when its cold out.
8:15 am – Take the dog for a real walk. He is a young golden retriever with lots of energy so despite the 18˚ temperature we walked for about a mile and a half. On our walk, I returned a library book and considered getting a coffee but it was icy and snowy and I figured the coffee would just end up spilling or I’d end up falling. Or both.
9:15 am – Get back home, shower, get dressed and settle in.
9:45 am – Get to work! I have two new clients (yay!) so work has been busy and I’ve been loving it.
1:00 pm – I’d been hungry for a bit but was in a good working groove so I didn’t stop until it was absolutely necessary.
Lunch was Trader Joe’s cauliflower gnocchi mixed with leftover shredded chicken and leftover curry. I basically took whatever I had in the fridge and mixed it together.
2:00 pm – Back to work.
4:45 pm – The dog was acting weird and then I realized how late it was getting and assumed he had to go out. I was right.
5:00 pm – Back to work. When I left my full-time job I never thought I’d work a moment past 4:00 pm. I was always the first one out the door when the day ended. But now, I really love the work I am doing and sometimes my day goes from 8:00 am to 8:30 pm (like Monday) and some days they don’t start until 11:00 am then they end at 2:30 pm.
6:00 pm – Yesterday my work day ended when SL got home.
6:30 pm – Time to start dinner!
On the menu for last night was cast iron cooked filets, asparagus and mushroom risotto and simple side salads.
I’ve been making this risotto for months and it has become a staple. SL is indifferent about it but I love and since I do the lion’s share of cooking, I’m going to cook what I like.
8:00 pm – SL and I are mid-construction and need to do some furniture shopping so we looked online at a few things last night and I got caught up in some house flipping show.
10:15 pm – Take the dog out one last time and realize its snowing…again. I’m so over winter and it’s barely started.
10:30 pm – Time for bed!
