I crushed my January goals (more on that tomorrow) and want to continue the streak into February. Along with completing my January goals again, I have set some February goals for myself to work for this month.
But first, I have a full day of eats to share from yesterday. Let me preface this – yesterday was quite an uncommon day in AEH land. I was up earlier than the world then stuck in a car for most of the day. But, I was still home in time for Taco Tuesday date night!
Because my first meal of the day was at 5:30 am (woof) it needed to be something easy.
Thankfully, I had my Cinnamon Date Muffins on hand. I ate 3 mini muffins and a handful of raspberries before I was out the door.
Three hours into my 3.5 hour drive to Burlington, VT yesterday, I dug into my first nack of the day which was a Chicken Sriracha Epic bar.
Epic bars are a great snack item that I try to keep in the house (and in my purse) as much as possible.
Lunch was consumed on the road and was half of an Italian sub. There was nothing special about it and I forgot to take a picture. Along with the sub, I had a few cucumber slices.
Taco Tuesday date night! Enough said.
I had one pork and one beef taco and some chips and salsa.
It was the perfect way to end a very long Tuesday!
Take 3 new to me fitness classes.
My regular studio rolled a new schedule with some new classes this week and I am challenging myself to step outside of the box and take new classes at new times.
Also, and I am very excited about this, a new Orange Theory is opening tomorrow right down the street from my work! (!!!!!!) I’m so pumped to try OT classes and will certainly report back.
Take a course.
I don’t know whether this will be a cooking class, or something else but I want to learn something new in February. I have a few ideas floating around in my head.
That is all I am going to commit to for my February goals. It’s a short month and SL and I have two ski trips planned along with various other commitments.
