Hey there and happy hump day. Can you believe that it’s halfway through August?! What the actual F?! Not into it.
This morning started with a head cold and a yoga class. This could have been a recipe for disaster but everything ended up being ok. I love this particular yoga class because the first half is intense (aka HARD and sweaty) and the second is super restorative which is the perfect mix for me.
And now that we’ve talked about fitness a little, let’s talk about food.
What I Ate Wednesday – The Garden Veggie Edition
Breakfast: Chicken thigh, 2 slices of bacon, mashed butternut squash (from the garden). I love breakfast foods but sometimes (most times) I just eat leftovers from other meals.
My beverage lineup included water with a ton of freshly squeezed lemon juice and an Iced Collagen Mocha Latte.
Lunch: Veggie + salami pizza on Paleo crust from the PaleOMG cookbook.
I’ve been obsessed with Juli’s pizza crust recipe since I bought her book over a year ago. Then, I got a Blue Apron delivery with a BBQ veggie pizza recipe that was delicious so I blended the two yesterday and it came out so well.
The veggies are red onion, mushrooms, poblano peppers, kalamata olives and tomatoes. Everything but the mushrooms and olives came from my garden! I added a handful of Applegate organic uncured salami slices. And then I didn’t add cheese because I don’t like it all that much.
I didn’t have a lunch beverage lineup but I did enjoy a tall glass of iced green mango tea.
Dinner: Pasta with eggplant, tomatoes and Butcher Box breakfast sausage. Dinner was loosely based off of this Saveur recipe but pretty much completely changed to suit my needs.
This is a great meal to make to use up our garden veggies. I used tomatoes, eggplant, banana peppers and poblano peppers. There is a bed of arugula under there as well for even more veggie power. I also tried Jovial gluten-free brown rice pasta for the first time and loved it! Even SL liked it!
After dinner, I enjoyed a glass of red wine then ended the night with a mug of Natural Calm Magnesium Supplement Drink in the Raspberry Lemon flavor.
Random – I’ve been having an intense s’mores craving lately and wanted a s’more more than anything with my glass of wine. Then, as we were watching OITNB, they were trying to start a fire to make s’mores!! How weird is that?!
Now, I am off to start my work (from home) day.
