Good morning and happy hump day. I’m coming at your today with another What I Ate Wednesday on this cold, rainy day in MA.
Today started as most Wednesdays do with a 45-minute cycle class. As much I love my studio classes, I am looking forward to getting more workouts done outside. Luckily, run club starts up again on Saturday!
This week’s What I Ate Wednesday highlights all of my eats from yesterday (Tuesday). I always have grand plans of taking nice pictures and styling up my food but in reality, I usually forget to snap a picture until I am a few bites in (see lunch).
Breakfast: Smoothie bowl – I had high hopes that this would be one of those beautiful, Instagram-worthy bowls but it looks like mud. I Was too lazy/hungry to add any toppings so I just dug in with a spoon.
AM Snack: Coconut Pineapple Muffin (<– check out the recipe) These are so good and remind me that summer is around the corner!
Lunch: Tuna salad on toasted Ezekiel bread with a side of veggies. Another meal that was not beautiful.
My tuna salad was made with one pouch of tuna, 3/4 avocado, 1 stalk of celery, small diced and 1/8 of a red onion, small diced (this makes 2 big servings).
PM Snack: An unpictured Skinny Cow ice cream sandwich. YOLO.
Dinner: Blackened haddock with pineapple/green pepper pico de gallo and a large side of roasted asparagus.
I will absolutely be making this meal again. It came together in no time and tasted amazing. For the blacked haddock i used a spice mix with paprika, garlic powder, thyme, cayenne and black pepper.
I don’t follow a strict macros-based diet but I do like to check out my macros on MyFitnessPal.
Carbs = spot on!
Protein and fat = very close. I’ll take it!
Currently, I am not tracking food/calories because I am trying to lose weight or gain tons of muscle but because I love numbers and information. I just find it fascinating.
