Ahhhh I am so late in posting this today. Despite getting up before 6:00 am, this day has completely gotten away from me. Today’s post is a short and sweet What I Ate Wednesday.
Breakfast: Steel cut oats that I cooked in the crockpot (overnight, while I slept) with strawberries and honey along with tea and collagen.
This was the first time I’ve made steel cut oats and only the second time I’ve ever eaten them. They are delish and I will absolutely be adding them to my regular breakfast rotation.

AM Snack: A throwback to childhood – apples and Teddie Peanut Butter (<– check out their new website!)
This was so good but didn’t do a ton to curb my hunger.
Lunch: I had a massive lunch including Red Lentil Butternut Squash soup, salad with kale, arugula, cherry tomatoes, kalamata olives and cucumbers and ground turkey with salsa verde.
This was a super random lunch but it worked.
On my way home from work a had a half of a Larabar before heading out for a super hilly run with SL.
Dinner: To celebrate taco Tuesday, I tried a new taco recipe what was a winner.
I roughly used Juli’s recipe for Chicken Tinga Tacos. The Lawson household does not have an Instant Pot so I just poached the chicken and shredded it which only took about 20 total.
These taco will be made again. And probably soon.
