Hey hey hey! Happy Hump Day! We are halfway to the weekend. Once I hit publish on this post I will be heading to the dentist 😬 then to work. BIG DAY over here!
Today I am sharing a day of eats. No two days are alike but I would like to repeat yesterday’s eats. I’ve been cooking up a PaleOMG recipe storm this week and loving every bite.
Breakfast: I had two breakfasts yesterday, kind of. I took an Orangetheory class in the morning so ate 1/2 of a Larabar before class then avocado toast after class.
What this breakfast was lacking – protein. Oops.
Lunch: Cajun chicken thighs and mesclun mix from the Whole Foods hot and cold bars along with leftover Asian Slaw from Monday’s dinner.
I mostly followed Juli’s recipe for the slaw and it was a big winner in my household. P.S. We had this whole recipe for dinner on Monday night and it was soooooo good! I also had a ginger kombucha – surprise, surprise.
Dinner: Thrive Market (<– save 25% on your first order) now sells meat and seafood and I ordered a whole bunch of seafood to try.
Last night I tore into the wild-caught sea scallops and made Juli’s Lemon Basil Seared Scallop Pasta – kind of. I didn’t have any basil so I skipped that part. But look at how good the scallops and bacon look!
I didn’t take any pictures of the final product because I dove face first into dinner.
SL and I watched random shows and enjoyed some popcorn for dessert and that was that for yesterday eats.
