Good morning and happy hump day my friends! It’s a dreary day here in my neck of the woods. Woof. Not exactly making want to super motivated…oh well.
I had my shit together yesterday and remembered to take pictures of all of my meals so I could put together a What I Ate Wednesday post. I also remembered to write down the workout I did which is at the end of this post. Yay me!
The cold January morning started with yoga class then a warm egg white scramble (left over from the weekend).
(egg whites, mushrooms, butternut squash, onions, arugula)
I added some Frank’s Red Hot sauce for some heat and enjoyed my eggs with a slice of avocado toast coffee with college and an apple cider vinegar drink.
1/2 of Maple Sea Salt Kind Bar on my way from a client’s meeting that wasn’t to be.
On my way there, I got a call from my office saying my client had to cancel last minute.
After running around to meetings at work, I was more than happy to settle down and eat lunch. It was leftover curry that I made Monday night.
I served my curry over a bed of zoodles and roasted vegetables instead of the traditional rice or rice noodles.
It looked ugly AF when I mixed it together, hence the two pictures.
Whipped chia pudding is making a comeback in my life. I’m not sure why I stopped making it but I made a batch this weekend and enjoyed some for a snack yesterday afternoon.
It was really plain because I forgot to pack toppings but if I were home I would have topped it with fruit, coconut shavings and cacao nibs!
I also enjoyed a kombucha…per usual.
You can’t get any lazier than Tuesday night’s dinner. I had some marinated chicken thighs thawing in the fridge so I threw them in dish for 35 minutes and heated up some leftover roasted butternut squash and made a green salad with quinoa.
Dinner in no time at all. (Thank you meal prep Sundays! 🙌)
This 30-minute workout flew by for me because you move from exercise to exercise so quickly that you don’t even realize how much time has past.
Maybe except for when you are doing burpees…
