Hello hello and happy hump day! We made it halfway through this work week! SL and I have a movie date night planned for today so I am hoping this day flies by. Fingers crossed!
Today I am sharing a day eats. Most weekdays look fairly similar, give or take a treat (or two), and yesterday was no exception. I hit a couple of bumps in the road when I ate what I packed for lunch at snack time and when my dinner meat didn’t defrost but those were just bumps, not derailments.
I am a planner and like to know that I have my meals covered for the week but when little bumps happen, I don’t let them take over. So here are all of yesterday’s eats.
Breakfast: Call me crazy but I’ve been having soup for breakfast all week.
I made Fed and Fit’s Four Greens Soup on Sunday and have been drinking it from a coffee mug for breakfast. The soup itself is not beautiful but the bowl of greens above is, so I am using this picture. I got a nice jump on getting in all my greens before 8:00 am. Yay me! I also had some pomegranate arils.
AM Snack: Because my breakfast was not calorie-filled, I was starving by 10:00 am and I had to dig into my lunch. 10:00 am steak tips anyone? 🙋 Now are 10:00 am steak tips breakfast #2 or lunch #1? Feel free to chime in.
Lunch: With my lunch already eaten, I HAD to hit up Whole Foods. HAD to. I justified my trip because there were actually a couple things I did need to get at WF that my regular grocery store doesn’t carry.
Normally, I get random things from the hot bar but nothing called to me today so I went with chicken and dumpling soup and a sandwich.
I’ve been loving roast beef sandwiches this week. What gives?
Dinner: Plan as I might, sometimes dinner just doesn’t work out as I plan. There were pork chops on the menu for last night that didn’t defrost like I had hoped so we pivoted.
We ended up having chicken sausage, roasted asparagus and leftover brussels sprouts and potatoes. No harm, no foul. Thi was not the most photogenic meal but it tasted great!
I rounded out the day with one (or two) Unreal Dark Chocolate Almond Butter Cups. These were unpictured because they were gone before I even thought about taking a picture.
