This hump day I am coming at you with another edition of What I Ate Wednesday and a look at my spring race schedule including 5ks, 10ks, and a tri!
Good morning friends. Anyone else digging out from a major snowstorm? Warm weather cannot come soon enough! In anticipation of better weather, I’ve been thinking a lot about my spring race schedule and trying to decide what to run.
More on that later but first, What I Ate Wednesday. I love seeing what people’s eats look like on a given day so I am sharing mine.
Breakfast – 3/4 cup egg whites, 2 breakfast sausages (I used this recipe as a guide) + coffee with collagen and cashew milk x2. No picture because I was in a rush to eat before a conference call.
AM Snack – Soooo this happened…
I made homemade cashew butter cups (mostly used this recipe) on Sunday on a complete whim and they came out so well. I am trying my hardest to limit myself to one a day. Who said you can’t have chocolate at 10:00 am?
Lunch – Leftover Panang Curry from the Fed & Fit cookbook.
I’ve made this twice now and I love it!
PM Snack – Kombucha. I wasn’t all that hungry and I knew we would be having dinner on the earlier side.
Dinner – Saucy Curry Garam Masala Meatballs over cauliflower rice.
You guys – these came out so well. Look for the recipe here on AEH next week! I also had a big old bowl power greens with evoo and balsamic vinegar.
Spring Race Schedule
I know it isn’t technically spring yet (next week!) but I am willing winter to be over and am excited about my spring race schedule. There is a good mix of races, some new, some old and I am excited to kick it off this weekend!
March 18 // St. Patty’s Day 10k
Only one race in March and its this upcoming weekend. We got hammer with snow yesterday so this race should be interesting. I haven’t done a winter-y race in years!
April 15 // Tortoise & Hare 10k OR Chase the Gorilla 5k
There are two great options for me to run on April 15th. I might get a free race bib for the 10k and if I do, that’s what I will run. If not, I will run the Gorilla 5k. I’ve run the Gorilla numerous times and love the race!

May 14 // JCC Triathlon by the Sea
For the 8th year in a row, I will be participating in this sprint distance triathlon. Yikes!
May 18 // Backshore 5 Mile
Why is this race on a Thursday night? Weird right? I have it on my radar but it will be hard to commit to on a Thursday night. This course is beautiful and I would love to run it if I can make it there after work.

May 19 // Flatbread Fiery 5k
The first place male and female runners win a free year’s worth of pizza. Chances of me winning are slim to none (closer to none than slim) but I want to run it because I am betting there is some free, post-race pizza! Well worth running 3.1 miles.
June 11 // Run/Walk for the Beach 5k
A few people in the office wanted to sign up for this and run as a team and I jumped on board. I haven’t run this race before but I know the course very well and it’s flat and has great views. Double win.
Just typing this up made me really excited for my spring race schedule. Hopefully the weather cooperates and I get a bunch of beautiful warm but not hot and slightly breezy sunny days. Ha – wishful thinking for this New England runner!

I love a long-er distance race (10k, half marathon). 5ks stress me out yet I run them more than any other distance.
