Good morning from another dreary day in Massachusetts. I’m going to need buckets of coffee to get through this morning. I haven’t done a What I Ate Wednesday post in ages (years maybe?) so I thought this would be a fun one because yesterday was taco Tuesday!
Like almost everyday since I made my first strata, I had a piece of strata.
I can’t seem to get a pretty looking picture of my pieces of strata so a nice ingredient picture will do.
Strata is the perfect breakfast food for me because it has a little of everything in it and keeps me satisfied for hours. This week’s strata had an english muffin base (3 muffins, halved), sautéed celery and onions, chicken breakfast sausage and pepperoni filling. The egg mixture had 4 whole eggs and 1.5 cups of liquid egg whites.
After cooking in the over for an hour, I sliced the strata into 8 pieces and am able to enjoy throughout the week.
I wasn’t famished by snack time (around 10:30 am) but I was excited to eat my 2 halos, so I did.
By lunchtime, I was famished! My co-worker asked if I wanted to try out a new-to-us cafe just a short walk away and of course I was down. The tiny cafe was super cute and had a much bigger menu than I expected. I ended up ordering the Italian Focaccia panini.

This sandwich was delicious and I housed the whole thing in a matter of minutes. I just wish it had some spinach or arugula to amp up the veggie factor.
I also grabbed a bag of Cape Cod chips.

I got home and changed for cycle class at Studio 5 (the #S5MayhemChallenge is in full force) and was hungry so I had another piece of strata. It’s literally the perfect food for all occasions.

After showering and getting myself together, it was time for dinner and date night!
Tres de Mayo Taco Tuesday
Cinco de Mayo is tomorrow SL and I celebrated last night with Taco Tuesday. I love Cinco de Mayo because for me it truly signifies that spring is here (or in our case, coming). Yes, in the US this is just an excuse to drink margaritas and no, I don’t know the history behind the holiday but I still love it.
The Mexican restaurant right down the street from our house does the BEST taco Tuesday: 2 tacos and 1 margarita for $10! And these are pathetic tacos, they are incredible tacos with homemade soft shells. I could probably eat like 6 of them but then I wouldn’t have room for chips so I stick to the 2 tacos. But first, the chips!
I opted for one beef and one pork taco and so did SL.
We also ordered a round (or 2) of cucumber habanero margaritas instead of plain ones. It was the right decision.
After a delicious dinner with my favorite guy, we headed home, cleaned up a bit then went right to bed.
