I’m coming at you today with a What I Ate Wednesday post and an intense 18-minute weighted tabata workout.
Good morning and happy hump day! This week already feels like it’s been going on for ages and I am more than ready for the weekend.
Today started with a sweaty cycle class which was exactly what I needed after doing NOTHING yesterday. I guess its what my body needed because I felt great at cycle this morning.
Although I’m boring, I like to share my eats on Wednesdays and I like to creep on what other people eat.
What I Ate Wednesday
Breakfast: Mixed Berry Smoothie Bowl and coffee with cashew milk and collagen
AM Snack: Nothing 🙆 My AM snack time came and went and I just wasn’t hungry so I didn’t eat the grapefruit I packed with me.
Lunch: Pad Thai Casserole via PaleOMG and a green “salad” (just baby butter lettuce in its package with a little evoo and balsamic vinegar)
I made this casserole over the weekend and only made one substitution – cashew butter for sunflower butter. And yes, I ate it at my desk at work.
PM Snack: Kombucha and 2 Salted Turtle Energy Bites. I made a huge batch of energy bites a couple weeks ago and am still eating my way through them. SL isn’t a fan so I get them all to my self!
Dinner: I totally blanked on taking a picture of dinner because I ate it too fast. Juli’s Maple Chili Pork Chops are AMAZING!!! Both SL and I loved them! We ate the chops with a side of asparagus.

Incredibly, my chops did actually look like this picture. I guess I did something right!
Weighted Tabata Workout
I completed this weighted tabata workout on Monday night followed by a 2.6 mile run.
18 minutes isn’t super long but don’t let that fool you. This workout is tough.
My legs still feel a little sore from those kettlebell swings. There is something about that exercise that smokes me every single time!
One quick tip – use a challenging weight for this workout. You’ll hate me for a little bit but love me after. You’re welcome!
